Today, I am going to share how to make Chinese Hand-pulled Noodles with only FOUR simple ingredients!
These Chinese hand-pulled noodles are SUPER chewy and I promise will taste better than ANY store-bought noodles.
Once you give these Chinese hand-pulled noodles a try, I promise your friends and family will be begging you to make them every single week (I know my fiance asked me every week)!
My mom learned how to make Chinese Hand-pulled noodles from a close chef friend who owned a famous Chinese Restaurant in Shanghai.
I get SO excited whenever she invited us over for dinner because she will ALWAYS have fresh noodles, dumplings, and buns ready for us.
We will be visiting her soon, and I can’t wait to learn more recipes to share with you.
It may seem intimidating at first to make Chinese Hand-pull Noodles at home, but trust me, after a few tries, you will become an expert!
Plus, did I mention it is SUPER fun to make these noodles at home? If you are worried, I would recommend letting it rest in oil for an extra hour.
The longer these rest in the oil, the softer the dough becomes, making it easier to stretch.
You can even prepare these the night before up to step 3 and let them rest in the fridge till you are ready to eat the next day.
There are so many ways to enjoy Chinese Hand-pulled noodles.
Two of my personal favorite is with my Taiwanese Beef Noodle Soup, and another one is my 10 Minutes Spicy Garlic Noodles.
The noodle is chewy but also soaks up all the flavor, which instantly elevates your dish. Depending on how thick you like your noodles, you can hit them against the countertop till it becomes your desired thickness.
Here are some other recipes that work AMAZING with these Hand-pulled Noodles –
- “Fried Sauce” Noodle – Zha Jiang Mian
- Instant Pot Authentic Taiwanese Beef Noodle Soup
- Spicy Garlic Noodles (10 Minutes Only!)
- 10 Minutes Spicy Sesame Noodles ft. The BEST Chili Oil
Ingredients
- 2 cups (280 g) of Bread Flour or All Purpose Flour
- 1 tsp of Salt
- 2/3 cups (160 g) of Warm Water
- ¼ cup of Oil
- In a big bowl, add in flour and salt and mix. Pour in warm water, and mix with a chopstick till flakey. Knead until it forms into a ball, cover, and let it rest for 10 minutes.
- After 10-15 minutes, knead until smooth (around 5-10 minutes); once it is smooth, Roll it out and cut it into eight pieces. Roll each piece out. ** YOU CAN ALSO USE A STAND MIXER TO SAVE TIME **
- In a bowl, add in ¼ cup of oil. Add in all the pieces and coat with oil. Cover and let it rest for 1 hour.
- After 1 hour, lightly roll out the dough. Make a dent in the middle. Slightly pull on both ends, and hit the dough against the countertop to stretch. Keep hitting until your desired thickness. Break it apart where you made a dent earlier to form into two long pieces of noodle.
- Cook the noodle in hot water for 3-4 minutes, drain and enjoy!
** The longer you rest the dough in oil, the easier it is to stretch out, you can prepare this the night before, or let it rest for 2 hours so it is super soft and stretchy **
Chinese Hand-pulled Noodles

- ¼ cup of Oil

- I just re-did this recipe again, and also included it in GRAMS measurement for the most exact fail-proof measurements.
- if this is your first time making this, rest the noodles for 2 HOURS so it is easier to stretch out. or prepare it the night before.

I really want to make these but as a first time noodle maker, I feel like I would benefit greatly from a video! Step 4 confuses me. It says “Break it apart where you made a dent earlier to form into two long pieces of noodle” but in the photo it looks like you got way more than 2 pieces of noodle from that rolled out piece of dough. How many noodles are you getting from each of the pieces of dough?

I will upload a video on YouTube later today. I do have the video up on my Instagram now. I broke it apart where the dent was made earlier so it forms into two noodles 🙂 I then folded it together for the photo so it looks like 4 but it’s one big circle noodle

I tried to make these last night but the dough never got to a point where I could stretch it so I just rolled it out super thin. I followed all the steps. What am I doing wrong?

I am sorry to hear that! Let it rest overnight in the oil and ensure that all the dough is coated in oil. Sometimes some flour takes longer to stretch out.

Today I jumped out of my comfort zone to make noodles for the first time. I haven’t even tried to cook packaged noodles so this was BIG for me. BUT they turned out amazing! Hi, Tiffy! Thank you so much for this recipe! 💕 I’m planning to make this for a dinner night, but I wouldn’t be able to make the noodle right before I serve it because of work. If I make it at noon, do I still have to put it in the fridge or just let it sit at room temp? And if I make it the night before and put it in the fridge, can I stretch and cook it right after it come out of the fridge or should I wait till it goes back to room temp?

anything over 3 hours id recommends putting it in the fridge 🙂 take it out 30 min before you stretch so it will go back to room temperature which will be easier too 🙂
