The best part about these homemade gluten-free noodles? You don’t even need to turn on the stove, all you need is a microwave, and that’s it!

I have a gluten sensitivity, so I am always looking for yummy, affordable, and delicious gluten-free noodles that TASTES GOOD!
To be honest, I came up with this recipe in the middle of the night when I was craving noodles, but I also didn’t want to feel bloated all night.
One thing I always have in my pantry is rice paper. Normally, I would roll them up into rice cakes and enjoy them with hoisin sauce as a lazy snack.
But I started playing around with different thicknesses and methods by stacking up rice paper and came up with this easy and delicious gluten-free noodles recipe.

To make gluten-free noodles, all you will need is rice paper, and that’s it!
Stack 5 pieces of rice paper together and soak them in warm water. Try to press out as many air bubbles as possible so the rice paper will stick together easily.
Transfer the rice paper to a microwaveable bowl, and add around ½ cup of water. Microwave for one minute and thirty seconds, and cut into your desired thickness.
PRO-TIP: Brush a little oil on your knife to prevent the noodles from sticking together.
You can enjoy the gluten-noodles with any sauce, but I prefer to enjoy them with spicy, oily sauces, as the noodle soaks up all the juices, making it super delicious!

Just attempted these and they were so mushy I couldn’t transfer them to cut they just made a gloopy mess 🙈 did I soak them too long in step 1? Can’t wait to try again once the kids are asleep 😂

Sorry to hear that! The first time is to ensure they all stick together. Once all stuck together, transfer to a microwavable bowl for 1 minute and 30 seconds. After microwaving, drain, and it should still be ONE piece; I like to use a spatula to remove it so that it holds together as one piece and isn’t too hot on your hands.
You can let it rest for 1-2 minutes without water to cool down and then cut into your desired thickness.

It should be ONE big piece; all stuck together. When you stack them and press them into the water, the rice paper should stick to each other, making it thick like noodles.
