Welcome to Day 3 of cooking 15 Street Foods for 15 Days! Today we are making the most highly requested Street Food dish, Yakisoba, Japanese Fried Noodles!
Yakisoba is easy, healthy, delicious, and ready in less than 20 minutes! My secret to my addicting Japanese Fried Noodle is my secret homemade Yakisoba sauce. The sauce is the perfect balance between savory, sweet, and tangy, and I promise, it is so much better than storebought ones!
The best part about Yakisoba is that you can customize it to whatever you have in your fridge and diet.
Today I am sharing a vegetarian version, but you can add whatever protein you like, such as pork belly slices, chicken, beef, or seafood! If you have kids who are picky eaters, this is the best way to incorporate different vegetables. Trust me, when I was a kid, my mom would always get me to try other vegetables by integrating them into my yakisoba noodles!
Let’s talk about my secret to making better than takeout Yakisoba, the homemade sauce!
The sauce drizzled on top of noodles and vegetables, which makes everything delicious. My homemade yakisoba sauce is a perfect balance between sweet and savory while being slightly tangy. I use only five simple ingredients that you already have at home- soy sauce, vegetarian oyster sauce, ketchup, Worcestershire sauce, and sugar. Mix well until the sugar is dissolved and the sauce is ready to go!
If you don’t have soba noodles, you can also use udon as well. I use frozen instant soba noodles today.
I blanched the noodles with hot water for 2 minutes or until the noodles are fully separated and quickly rinsed them with cold water to stop the cooking process. If you don’t have soba noodles on hand, frozen udon also works great! Make sure to blanch the noodles first to prevent the noodles from becoming overly soggy when pan-frying. A few instant noodles yakisoba brands I recommend are Hakubaku Restaurant Style Fresh Noodle and Maruchan Yakisoba.

Ingredients
- 3 packs of Soba noodles (450g)
- 1/4 Cabbage (sliced)
- 3 Green Onion (cut into 2-inch pieces)
- ½ Carrot (shredded)
- 8 Shiitake Mushrooms (sliced)
- ½ Onion (sliced)
- 1 tsp of Black Pepper
- 1 tbsp of Soy Sauce
- 2 tbsp of Vegetarian Oyster Sauce
- 4 tbsp of Worcestershire Sauce
- 1.5 tbsp of Sugar
- 1.5 tbsp of Ketchup
- In a bowl, mix soy sauce, vegetarian oyster sauce, Worcestershire sauce, sugar, and ketchup. Mix until sugar has melted
- In a pan, add drizzle in oil and turn the heat up to medium-high. Once the pan is hot, add in sliced onion, carrots, and shiitake mushrooms. Saute for 2-3mintues
- Next, add in sliced cabbage and green onion and saute for another 1-2 minutes.
- Make a hole in the middle of the pan and add in soba noodles (refer to notes), pour in ½ of the mixed sauce and black pepper, and saute together for 1-2 minutes. Once mixed well, pour in the rest of the sauce and saute together for another 2 minutes on high heat. Garnish with pickled ginger, and enjoy!
NOTES
- If you are adding other protein, cook those first before the vegetables. For example, if you add sliced pork belly, saute the pork belly in medium-high heat for 3-4 minutes or until crispy. Remove the pork belly and continue on steps 2-3 with pork belly oil. Add back in the pork belly before step 4 and continue with the rest of the steps.
- Depending on what brand of noodles you use, you may need to blanch the noodles with hot water for 2-3 minutes or until noodles are separated. Drain and rinse with cold water before adding it to the pan to saute. This step will prevent the noodles from getting soggy
