This iced Blueberry Matcha Latte is fruity, refreshing, and easy to make at home. Made with earthy matcha, fresh blueberries, and your milk of choice, this is a colorfully layered, Asian café-style drink you can easily make at home. This easy recipe includes a homemade blueberry syrup that doubles as a jammy topping for yogurt bowls, pancakes, or fruity sodas, and is so easy to prep in advance. Served over ice, this matcha drink is the kind of pick-me-up that makes summer mornings feel like a treat.
In a small saucepan, combine 5 cups fresh blueberries, 2.5 cups water, and ¾-1 cup sugar over medium heat. Stir and bring to a gentle boil.
Lower the heat and simmer uncovered for 25–30 minutes, stirring occasionally, until the berries break down and the mixture thickens slightly. Stir in 1-2 tsp fresh lemon juice if using.
Set a fine mesh strainer over a bowl. Pour half the mixture through the strainer and press gently with a spoon to extract a smooth syrup.
Leave the remaining mixture unstrained to use as a chunky jam, or combine the syrup and jam for a balanced texture.
Set aside and let it cool to room temperature. Transfer each one into a clean jar or airtight container.
