This Brown Sugar Ginger Syrup is the perfect base for a cup of hot ginger tea to warm you up while you’re curled on the couch reading a new book. It hits the spot on those cold winter days and always leaves me feeling so, so cozy. This tea is not only easy to make in syrup form, you can turn that syrup into candied ginger and ginger syrup cubes for easy storage! One sip of this sweet ginger tea feels like a big warm hug, and you'll need this simple tea all the time during a cold winter.
In a small pot on medium high, sauté ginger with brown sugar for 2-3 minutes, or until sugar dissolves.
Add in rock sugar, and mix all ingredients in a pan over low simmer until all the sugar has dissolved, and the liquid is thick like honey. This should take about 5-7 minutes.
Strain the ginger from the pot onto parchment paper to cool, using chopsticks to spread out the slices.
Pour the syrup into a separate parchment paper-lined baking dish.
Let both cool completely.
Once cooled, cut cooled syrup into cubes. Each cube should be about 1-1.5 tbsp.
To make the tea, add 1 cube to a cup of hot water.
Notes
To serve, place 1 brown sugar ginger syrup cube into a cup with 1-2 pieces of candied ginger. Both the syrup and candied ginger can be stored in airtight containers. The candied ginger lasts about 3 weeks and the ginger syrup cubes can be stored up to 1 month.
