If you’re looking for a hearty meal with simple ingredients, you have to make these Creamy Miso Mushroom Chicken Thighs! It takes only 25 minutes to make this cozy, super easy weeknight dinner that reminds me so much of JapaneseYoshoku restaurants. This cozy chicken dish is rich, savory, and packed with umami from both white miso and mushrooms. There’s nothing I love more than soaking up that decadant cream sauce with a scoop of rice, some noodles, or a piece of my moms’ No Knead Bread!
Marinate the Chicken: In a bowl, season chicken with garlic powder, onion powder, oregano, thyme, salt, pepper, and oil. Mix well to coat evenly.
Pan-Fry the Chicken: Heat a large pan over medium heat. Pan-fry the chicken for 5 minutes per side, until golden and cooked through. Remove from the pan and set aside.
Sauté the Aromatics: In the same pan, melt butter. Add green onion whites, mushrooms, and garlic. Sauté for 3–4 minutes, until mushrooms are softened and lightly golden.
Make the Sauce: Pour in chicken stock and heavy cream. Stir well, then add miso paste and mix until fully dissolved. Bring to a gentle simmer.
Finish the Dish: Add the chicken back into the pan. Simmer for 3–4 minutes, spooning the sauce over the chicken until everything is rich and creamy.
Serve & Enjoy: Serve hot with rice, pasta, or crusty bread.
