This Homemade Pesto is so easy to make ahead, and uses such simple and fresh ingredients. This week, the farmer's market's got plenty of fresh basil, so we're making homemade pesto for pesto pasta salad for my sister's pizza potluck. I also have a variation that makes this homemade pesto NUT FREE, so you won’t have to worry about nut allergies. Plus, keep basil SUPER GREEN while making pesto with my secret pesto tip!

Ingredients

4 cup fresh basil leaves
6-8 cloves garlic peeled
3/4 cup pine nuts
1 cup freshly grated Parmesan
Salt to taste
1 cup olive oil

Instructions

Put the fresh basil in an ice bath for 2-3 minutes.
Toast pine nuts (or sesame seeds) for 3-4 minutes or until lightly golden brown.
Blend basil, garlic, roasted pine nuts (or sesame seeds), salt, olive oil, and parmesan cheese until smooth.

Notes

For times when I don't have pine nuts, I replace it with 3 tablespoons of sesame seeds. It keeps the same nutty taste, but is completely NUT FREE!
