Mix sugar, lemon zest, and salt until well combined
Beat room temp butter into the sugar mixture until fully incorporated
In a separate bowl, sift the flour and mix in baking powder.
Add in 4 large eggs, mixing 1 at a time
Mix in ½ of your sifted flour.
Add greek yogurt and vanilla extract and beat together until fully mixed and smooth.
Add in the other ½ of your sifted flour and mix
