This Hong Kong Cafe inspired Mini French Toast 迷你港式西多士 is now my new go to weekend brunch. Inspired by that crispy Hong Kong Cafe toast, this peanut butter-filled dessert is crispy on the outside, soft and fluffy on the inside. It’s the sweet-creamy flavors of the Hong Kong Cafe recipe you’ve always loved in a mini bread roll. Made with King’s Hawaiian sweet rolls, this crispy toast recipe is the perfect way to indulge on the weekend.

Spread about 1 tbsp of peanut butter per roll on the inside slices and sandwich them back together.
Whisk eggs and milk in a shallow bowl. Dip both sides of each peanut butter-filled roll into the egg mixture, coating fully but not soaking.
Shallow-fry in oil over medium heat for 2-4 minutes or until both sides are golden brown and crispy.
Drizzle with sweetened condensed milk and serve warm.
Notes
Instead of peanut butter, you can also replace the filling with your favorite condiment to go with toast: jam, almond butter, pistachio butter, Nutella, or sugar. If you don’t have sweet rolls, you can use white bread, brioche, or Milk Bread as your toast base instead.
