This One Pot Coconut Prawn Curry is the kind of easy, comforting one pot dinner you’ll actually look forward to after a long day. It is rich and satisfying, with tender prawns in a creamy coconut sauce, all ready in under 30 minutes. Perfect for busy weeknights or laid-back weekends, it feels like a treat without extra work, and cleanup is minimal. Spoon it over rice, swirl it into noodles, or tear into warm bread, and you will want to scoop up every last bit.
In a bowl, toss 1 lb Shrimp or Jumbo Prawns with 1 tsp paprika, ½ tsp turmeric, 1 tsp garam masala, 1 tsp Curry Powder, Salt & Pepper, and 1 tbsp neutral oil. Set aside while prepping the veggies.
Heat a large pot or pan over medium-high heat. Add the marinated prawns and sauté for 4–5 minutes, just until they start turning pink and are almost cooked through. Remove and set aside.
In the same pan, add 1 tbsp oil if needed. Sauté the 1 red onion for 2–3 minutes until soft and fragrant, then add in the sliced 3 bell peppers. Cook for another 3–4 minutes until slightly tender.
Pour in the 1 can coconut milk, then rinse the can with about ¼ cup water and add that in as well for a little more sauce. Drop in the ½ pack Japanese Curry Cubes and optional chili flakes , stir until they dissolve completely. Let it simmer for 5–7 minutes until the sauce is thick, creamy, and flavorful.
Return the prawns to the pot and let them simmer for 2–3 more minutes to finish cooking and soak up the curry.
Spoon the curry over fluffy rice or pour over noodles. Garnish with Fresh cilantro or green onions if you’d like.
