This 5 ingredient Miso-Marinated Salmon is the perfect meal planning for a busy week. You can prep in 5 minutes, with only 5 ingredients, and have a main dish ready for the rest of the week. Just pop it into the air fryer, oven, or pan-fry whenever you’re hungry! This savory-sweet, fatty marinated salmon filet has slightly caramelized edges that is so good with a simple bowl of rice and a few cold sides. You’ll want to make this over and over again!
In a small pot, add mirin, sake, sugar, and miso paste. Whisk until smooth.
Place the pot over medium heat and gently bring the mixture to a simmer, about 3–4 minutes, stirring occasionally, just until the sugar dissolves and the alcohol cooks off. Remove from heat.
Once the marinade has completely cooled, place the salmon in a glass storage dish and pour the marinade over it. Lay a piece of parchment paper directly on top so the salmon stays fully submerged.
Cover the dish and marinate in the refrigerator overnight, or up to 3 days.
Air Fryer Instructions: When ready to cook, remove the salmon from the marinade and let excess drip off. Air fry 3 filets at 400°F for 12 minutes.Oven Instructions:When ready to cook, remove the salmon from the marinade and let excess drip off. Place the fillets on a parchment-lined baking sheet. Bake at 425°F (220°C) for 10–12 minutes, or until the salmon is just cooked through and flakes easily with a fork.Optional: Broil for the last 1–2 minutes for a lightly caramelized top.
Notes
I baked 3 filets together in the air fryer for about 12 minutes, but if you’re doing one at a time, make sure to decrease the cooking time by about 2 minutes! If you don’t have mirin for that sweet and tangy flavor, you can combine 1 tbsp rice vinegar with 1/2 tsp sugar or honey. Or, you can use white grape juice, apple juice, or balsamic vinegar for more depth. You can also buy Mizkan Honteri, an alcohol-free, mirin-like condiment. For sake substitute, especially if you’re alcohol-free, you can mix 1 part rice vinegar with 3 part water. Or, use chicken or vegetable stock for savory depth, or white grape juice for a sweeter, tenderizing effect. You can also use non-alcoholic amazake, which is a fermented rice drink that will give you a more authentic match!
