This 5 ingredient Japanese Miso-Marinated Salmon is the perfect meal planning for a busy week. You can prep in 5 minutes, with only 5 ingredients, and have a main dish ready for the rest of the week. Just pop it into the air fryer, oven, or pan-fry whenever you’re hungry! This savory-sweet, fatty marinated salmon filet has slightly caramelized edges that is so good with a simple bowl of rice and a few cold sides. You’ll want to make this over and over again!

Overnight Miso-Marinated Salmon Perfect For Meal Prep
I’ve had so many requests to include more meal prep recipes in 2026. So, I want to start off with one of my all-time favorites, Overnight Miso-Marinated Salmon also known as Japanese Salmon Misozuke 鮭の味噌漬け. I really believe the easiest way to cook more is meal prepping staple dishes. That way, you don’t have to think about what to eat for every single meal, especially when you’re too busy. You always have something yummy and nourishing ready to go in the fridge.
I swear miso salmon tastes good with everything for any meal, breakfast, lunch, or dinner. All you need to do is make the miso marinade, and soak the salmon in the fridge overnight or up to 3 days. Just cook the salmon whenever you want to eat! Not going to lie, I’ve been dreaming about this salmon from the moment I prepped it. So, I’m super excited to have it today for brunch a few side dishes. Today, we’re using the air fryer to cook the salmon to perfection. But you can also pan fry, or put it in the oven.
Miso-Marinated Salmon Ingredients
- 5 salmon filet
- 1/2 cup mirin
- 1/3 cup sake
- 3 tbsp sugar
- 2.5-3 tbsp miso paste

Salmon Filet
I got these beautiful salmon filet from Costco the other day, and I want to have salmon a lot for lunch this coming week. Salmon is rich in omega-3, vitamin D, selenium, and other nutrients. It supports your heart, brain, skin, AND immune system. I am using fresh filet today, but frozen ones work as well. Just make sure to defrost before marinating! Once you add the salmon in the marinade, it can last in the fridge up to 3 to 4 days.

Miso Sake Marinade
This Miso Sake Marinade is super super simple, and only takes 4 ingredients: mirin, sake, sugar, and miso. It’s slightly sweet, but still has that savory-umami miso flavor. Plus, as the salmon air fries, the sugars in this marinade caramelizes, giving it that slightly burnt-sugar bite especially at the ends of filet.
If you don’t have mirin for that sweet and tangy flavor, you can combine 1 tbsp rice vinegar with 1/2 tsp sugar or honey. Or, you can use white grape juice, apple juice, or balsamic vinegar for more depth. You can also buy Mizkan Honteri, an alcohol-free, mirin-like condiment.
For sake substitute, especially if you’re alcohol-free, you can mix 1 part rice vinegar with 3 part water. Or, use chicken or vegetable stock for savory depth, or white grape juice for a sweeter, tenderizing effect. You can also use non-alcoholic amazake, which is a fermented rice drink that will give you a more authentic match!

How To Make Miso Marinated Salmon
- In a small pot, add mirin, sake, sugar, and miso paste. Whisk until smooth.
- Place the pot over medium heat and gently bring the mixture to a simmer, about 3–4 minutes, stirring occasionally, just until the sugar dissolves and the alcohol cooks off. Remove from heat.
- Once the marinade has completely cooled, place the salmon in a glass storage dish and pour the marinade over it. Lay a piece of parchment paper directly on top so the salmon stays fully submerged.
- Cover the dish and marinate in the refrigerator overnight, or up to 3 days.
- Air Fryer Instructions: When ready to cook, remove the salmon from the marinade and let excess drip off. Air fry 3 filets at 400°F for 12 minutes.
Oven Instructions:When ready to cook, remove the salmon from the marinade and let excess drip off. Place the fillets on a parchment-lined baking sheet. Bake at 425°F (220°C) for 10–12 minutes, or until the salmon is just cooked through and flakes easily with a fork.✨ Optional: Broil for the last 1–2 minutes for a lightly caramelized top.
Air Fry or Oven Bake Your Salmon
After marinating, all you have to do is pop it into the Air Fryer. I baked 3 filets together in the air fryer for about 12 minutes, but if you’re doing one at a time, make sure to decrease the cooking time by about 2 minutes!
For the oven, place the fillets on a parchment-lined baking sheet. Bake at 425°F (220°C) for 10–12 minutes, or until the salmon is just cooked through and flakes easily with a fork. For a slightly caramelized top, you can also broil for the last 1–2 minutes!

I like the sauce that is not only for salmon, even other fish and chicken also nice.
This is a much better recipe than those other miso salmon ones that have soy sauce. Those other recipes are way way too salty.
