This 5 Minute Balsamic Cherry Tomato Burrata Salad is the simplest way to impress guests with an extra elegant side dish, or just as a healthy afternoon snack! Creamy fresh burrata seasoned with salt, pepper, and drizzles of olive oil and tart balsamic vinegar makes this the most refreshing pantry ingredient salad. I made this as part of my brunch spread for my mom and my sister, and took only 5 minutes to throw together. Next time I have a girl's night or a book club event at home, I'm going to make this burrata salad again!
Place halved tomatoes on a plate with ball of burrata in the middle
Slice down the middle of the burrata without cutting all the way through and spread open the creamy middle
Sprinkle burrata with black pepper
Drizzle with olive oil and balsamic glaze
Garnish with parsley and enjoy.
Notes
This gorgeous, bright tomato salad can be enjoyed simply by itself or served with warm toasted crostini or slices of my No Knead Bread, just like a bruschetta. If I'm eating this salad one its own as a meal, I like to add some extra proteins with prosciutto. This salad actually also goes well with seasonal fruits, like peaches or melons as well!
