This cheesy, spicy Galbi-Jjim, Korean Braised Beef Short Ribs is one of my all-time favorite comfort dishes. This braised short rib dish is so rich and absolutely melts in your mouth. For for cozy winter nights. it's the ideal stay-at-home winter dinner meal. To make this Galbi-Jjim even better, we're topping it off with melted shredded cheese - just like Korean BBQ Restaurants in Los Angeles! This tender, flavorful short rib on top of a big bowl of rice could be dinner for you tonight!
Soak short ribs in cold water for an hour and a half, changing the water every 30 minutes.
Blanche the short ribs in boiling water with green onion and ginger slices for 10 minutes.
While the short ribs blanche, combine Korean pear, fresh garlic, soy sauce, sake, sweetener of choice, and Korean red chili flakes in a blender and blend until smooth.
Rinse short ribs in cold water, and place them in a separate pot.
Drizzle in the sauce from the blender and add chopped onion. Cover and bring to a low simmer for 30 minutes
Remove the cover, and simmer for 10 more minutes.
Add in carrots and potatoes, mix well, cover and simmer for additional 30 minutes, or until vegetables are cooked through and beef is tender.
