Galbi-Jjim: Korean Braised Beef Short Ribs
My mom and sister were coming over for dinner and I knew this would be the perfect thing to make for a cold day. I found some beautiful short ribs at the grocery store the other day and just knew I had to make some Galbi-jjim. I haven’t had traditional Braised Korean Short Ribs since I was in LA last year!
This dish made my whole house smelled amazing. It’s the perfect addition to a big bowl of rice and some fresh kimchi. It was so good, we forgot to take photos!
Prepping Your Short Ribs For Braising
With braising beef short ribs, one of the most important steps is cleaning and prepping the short ribs. I always start by soaking the ribs in cold water for about an hour and half, changing the water every 30 minutes. This process helps tenderize the beef and remove the myoglobin, giving the dish a cleaner beef flavor.
Another pro tip with this recipe is to blanche the beef with ginger and green onion for around 10 minutes before braising. This step is crucial because it draw out impurities and helps the beef soak up even more yummy flavor.

Make Your Own Galbi Jjim Sauce
You don’t need to go to the restaurants in LA for quality Galbi-Jjim flavors, because the sauce is so easy to make at home using Korean pear, garlic, soy sauce, sake, Korean red chili flakes, and your favorite sweetener. Today, I used honey for its gentle sweetness that goes so well with both the Korean pear and the fatty short ribs.
This sauce is a total game changer! The Korean pear and garlic inside tenderizes the beef while it braises. It’s so aromatic and savory, with a bit of a kick to warm up your whole body – perfect for cold weathers.

Restaurant Style Extra Cheesy Galbi-Jjim At Home
Ever since I tried this extra cheesy version of Galbi-Jjim in LA, I can’t stop thinking about it. There’s something so satisfying about the combination of saucy, spicy short ribs with a gooey, slightly charred layer of melted cheese on top. So today, I also covered my beef short ribs with a generous sprinkle of shredded cheese. Then, I gave it an extra torching to make sure the cheese comes out nice and bubbly.

Easy Galbi Jjim Ingredients
- 2 Pounds Beef Short Ribs
- 2 Large Carrots
- 4-5 Golden Potatoes
- 1 Onion
- 4-5 Stalks of Green Onion
- 3 Slices of Ginger
Spicy Galbi-Jjim Sauce
- 1 Korean Pear
- 23-25 cloves Garlic
- 2 Tablespoons Soy sauce
- 2 Tablespoons Sake
- 1 tbsp Sweetener (I used honey)
- 1 Tablespoon Korean red chili flakes

- Soak short ribs in cold water for an hour and a half, changing the water every 30 minutes.
- Blanche the short ribs in boiling water with green onion and ginger slices for 10 minutes.
- While the short ribs blanche, combine Korean pear, fresh garlic, soy sauce, sake, sweetener of choice, and Korean red chili flakes in a blender and blend until smooth.
- Rinse short ribs in cold water, and place them in a separate pot.
- Drizzle in the sauce from the blender and add chopped onion. Cover and bring to a low simmer for 30 minutes
- Remove the cover, and simmer for 10 more minutes.
- Add in carrots and potatoes, mix well, cover and simmer for additional 30 minutes, or until vegetables are cooked through and beef is tender.

- 1/2 cup shredded cheese optional
Spicy Galbi-Jjim Sauce
- 1 Korean Pear
- 23-25 cloves Garlic
- 2 Tablespoons Soy sauce
- 2 Tablespoons Sake
- 1 tbsp Sweetener I used honey
- 1 Tablespoon Korean red chili flakes
Instructions
- Soak short ribs in cold water for an hour and a half, changing the water every 30 minutes.

- Blanche the short ribs in boiling water with green onion and ginger slices for 10 minutes.
