CALLING ALL MUSHROOM LOVERS, you need to try my 20 minutes Creamy Mushroom Pasta! If you love mushrooms, my Creamy Mushroom Pasta is the perfect recipe for you. This Creamy Mushroom Pasta is rich, creamy, savory, and packed with umami flavors that will have you craving more.
Prepare pasta based on boxed instructions, cook till al-dente, drain and set aside.
Add sliced mushrooms to a large frying pan and turn the heat to medium-high. Saute for 2-3 minutes without any oil. This will bring out all the mushroom fragrant.
Next, add two tablespoons of butter, soy sauce, and chopped shallots. Saute for another 2-3 minutes or until shallots are translucent.
Pour in cream or milk, black pepper, and dashi powder. Mix well and taste to see if you want to add more salt.
Bring it to a simmer for 2 minutes, and add the cooked pasta. Mix well, and cook on high heat for 1-2 minutes, so the pasta soaks in all the sauce.
Finish off with one more tablespoon of butter and fresh chives. Garnish with parmesan cheese to make it extra creamy!

Notes
I am using Trader Joe’s Gigli Pasta today, but I also made it with fettuccini, spaghetti, and udon noodles! If you are gluten-free, you can use gluten-free pasta, or I also have a risotto recipe that is also super delicious!
For mushrooms, I am using shiitake mushrooms, cremini mushrooms, and shemiji mushrooms. You can customize it with any mushroom of your choice; however, I highly recommend finding shiitake mushrooms, as they add savory umami flavors that cannot be found in other mushrooms.
If you are VEGETARIAN, swap dashi powder with miso
