Fresh tomatoes, sauteed with aromatics and simmered into a sauce, made extra tasty with a few secret ingredients. The tender hot pot beef and potatoes soaks up all that bright, tomatoey sauce. Blanch hotpot beef in boiling water for about 30 seconds to remove impurities, then set aside. This step is optional, but keeps your tomato broth clean and bright.
In a pan with neutral oil on medium-high, saute fresh tomatoes with white parts of the green onion and minced garlic. Let everything cook for 4 to 5 minutes until the tomatoes slowly break down and release their natural juices.
Next, season with ketchup, soy sauce, and white pepper. Mix well.
Add in chopped potatoes and stock of choice. Let it simmer until the potatoes are tender, about 5-6 minutes or longer.
Finish off by adding the hot pot beef in and simmer for another 5 minutes.
Garnish with green parts of green onion and serve.
