- 250-300 g hotpot beef
- 2 tomatoes
- 1 tbsp neutral oil
- 4 Stalks green onions chopped, separate white part and green part
- 1 tbsp minced garlic
- 1.5 tbsp ketchup
- 0.5 tbsp soy sauce
- 1/8 tsp White pepper or to taste
- 1-2 potato cut into bite sized chunks
- 1.5-2 cups Beef Stock or stock of choice

Hotpot Beef Slices
Using beef slices for hot pot in this recipe makes it ridiculously convenient, because it cuts down on hours of simmering to tenderize the meat. It cooks quickly, but still stays tender after simmering for a while. I’m using a mix of beef ribeye slices and fatty beef, which gives a good balance of fat and meat.
This is totally optional, but I like to blanch the beef first to remove any impurities. This removes residual blood or denatured proteins that can affect the flavor of the stew. All you need is about 30 seconds of blanching, then the beef is ready to add into the stew!

Tomato Stew Base
The best part of this stew is the natural tanginess and sweetness from the fresh tomatoes. - In a pan with neutral oil on medium-high, saute fresh tomatoes with white parts of the green onion and minced garlic. Let everything cook for 4 to 5 minutes until the tomatoes slowly break down and release their natural juices.
- Next, season with ketchup, soy sauce, and white pepper. Mix well.
- Add in chopped potatoes and stock of choice. Let it simmer until the potatoes are tender, about 5-6 minutes.
- Finish off by adding the hot pot beef in and simmer for another 5 minutes.
- Garnish with green parts of green onion and serve.
