Crack the eggs into a bowl and add chopped green onions, soy sauce, salt, and pepper. Whisk until well combined.
Heat oil in a pan over medium heat. Once hot, pour in the egg mixture.
Let the eggs cook for 2–3 minutes, or until the edges begin to set.
Using chopsticks or a spatula, gently drag the cooked edges toward the center, letting the uncooked egg to flow to the edges. Repeat this process until the eggs reach your desired consistency.
