I’ve been trying to eat breakfast daily because starting the day with something yummy just makes everything better, and this Green Onion Scrambled Egg Rice Bowl makes it so easy! This egg rice bowl has been my go-to speedy breakfast and lunch since college, and it’s never failed to comfort me in one bite. All you have to do is scramble up some eggs with green onion and a little bit of soy sauce until they’re super fluffy, then serve it with hot rice, some cucumber, kimchi, and a sprinkle of furikakke toppings.

It’s a simple rice bowl, but it’s easy to get creative with toppings. I kept my breakfast bowl simple today with kimchi, sliced cucumbers, and furikakke toppings, but you can add all your favorites on your rice bowl. If I have my side dishes in the fridge, I sometimes add my spinach salad or korean beansprouts instead. Or, I pair this rice bowl with a nice spicy cold tofu.

You can also add other ingredients to your scrambled eggs, like mushrooms, onions, or shrimp, for an even more filling bowl.

Scrambled Egg Breakfast Bowl Ingredients

  • 4 stalks green onions, chopped
  • 3 eggs
  • 1.5 tbsp soy sauce
  • Salt and pepper to taste
  • 2 tbsp oil
  • 2 cucumbers, sliced
  • 1 bowl of hot rice
  • Kimchi
  • Furikake topping

How To Make Scrambled Egg Rice Bowl

  1. Crack the eggs into a bowl and add chopped green onions, soy sauce, salt, and pepper. Whisk until well combined.
  2. Heat oil in a pan over medium heat. Once hot, pour in the egg mixture.
  3. Let the eggs cook for 2–3 minutes, or until the edges begin to set.
  4. Using chopsticks or a spatula, gently drag the cooked edges toward the center, letting the uncooked egg to flow to the edges. Repeat this process until the eggs reach your desired consistency.
  5. Serve the eggs on a bowl of hot rice. Top with sliced cucumber, a side of kimchi, and a sprinkle of furikake.
