Breakfast Sandwich: Perfect On-The-Go Breakfast!

It’s my mom’s birthday celebration, and I want to make sure that I have all the energy I need to prepare for her birthday feast! We’re making a ton of tempura as well as cold soba, and karaage.

Life gets busy and it can be easy to forget about our own needs sometimes. I love getting the day started right by eating a proper breakfast, and this sandwich recipe is it! This breakfast sandwich is a MUST HAVE for busy mornings. It hits the spot every time, even if I’m in a rush.

Make This Breakfast Sandwich Your Own

For my sandwich today, I used sliced ham, egg, and cheese inside my sandwich. You can switch out the ingredients as you like, and use bacon, sausage, or tofu patties instead. I sometimes even use shredded Asian Rotisserie Chicken if I’m out of ham! If you don’t have English muffins, you can also use toast. Or better yet, use my mom’s no knead cheesy bread recipe.

To spice things up, I also sometimes fry the eggs and ham in chili oil or scallion oil to switch up the flavors of my sandwich!

Easy Breakfast Sandwich Ingredients

  • 2 English Muffins
  • 2 eggs
  • 2 slices of ham
  • 2 slices of cheese
  • Pepper to taste
  1. Put a pan on the stove on medium-high, and put down two slices of ham. On the other side of the pan, crack in 2 eggs. Add pepper on top of the eggs as it’s cooking.
  2. Let it cook for 2-3 minutes, or until egg whites are mostly cooked, before adding a slice of cheese on each slice of ham.
  3. Cover the pan for 1-2 minutes to let the cheese melt.
  4. In the mean time, toast your English Muffins in the toaster.
  5. Once toasted, assemble by placing your cheesy ham on top of the bottom side of the English muffin. Slide the fried egg on top, and cover with the top side.
