I love having Soba Noodles for lunch because it is fast, healthy, and delicious.
I always pre-make a jar of Soba Noodles Dipping Sauce at the start of the week to save time and have lunch ready in less than 5 minutes!

Cold Soba Noodle Dipping Sauce is a staple recipe for the summer.
It is refreshing, healthy, and easy to prepare.
If you have never had cold soba noodle dipping sauce before, it is a traditional Japanese noodle dish often served in the summer.
The dipping sauce is savory and packed with umami flavors. A little dipping sauce goes a long way.
To enjoy the dipping sauce –
First, prepare the soba noodle based on packaged instructions, and rinse the noodle with cold water.
Next, pour a cup of dipping sauce on the side.
You can spice up the sauce by adding green onion, grated daikon, or wasabi.
Finally, dip the noodle in the sauce and slurp it to enjoy.

It takes less than 10 minutes to make Cold Soba Noodle Dipping Sauce, and it can last in the fridge for a month.
All you need is Dashi Stock, Soy Sauce, and Mirin.
I like to save time by purchasing pre-made instant dashi stock.
Dashi powder is an essential staple ingredient in my pantry; it adds instant umami flavor and can be used in many recipes.
If you dont consume alcohol, you can replace Mirin with 1/2 cup of water with 2 tbsp of sugar for this recipe.
Bring everything to a simmer for 5 minutes, and store in a jar to cool down. Once the sauce cools down, it can be stored in the fridge for a whole month.

“Soba” stands for buckwheat in Japanese.
Buckwheat is gluten-free, which is a great noodle alternative for gluten-sensitive people.
You can purchase Soba Noodles online or at your local Asian grocery market. I enjoy J-Basket Dried Buckwheat Soba Noodles and Hakubaku Soba Noodles from Amazon.
Prepare the noodle-based on the instructions on the package. Keep in mind that you need ALOT of water to prepare soba noodles since they can get slimy and stick to the bottom of the pot.
I like to double the amount of water to prevent the noodles from sticking.
After the noodles are cooked, rinse with cold water and blanch with ice water for 30 seconds to make the noodles extra chewy!
