
Who’s ready to make Vegetable Fried Noodles in 20 MINUTES?
Healthy and delicious Vegetable Fried Noodles is one of my go-to recipes that is affordable and easy to make at home.
The savory and slightly sweet sauce pairs perfectly with any vegetables of your choice.
If you are having a hard time getting vegetables in your system, this Vegetable Fried Noodles recipe is for you!

I am always looking for easy and healthy recipes to make, and my faovirte has got to be Vegetable Fried Noodles!
You can throw in any vegetable of your choice, depending on what you have in the fridge.
Some of my go-to vegetables are mushrooms, cabbage, celery, carrots, onion, broccoli, zucchini, and baby corn.
If you are on a time crunch, you can also add in pre-chopped coleslaw salad mix, and you got lunch ready in 10 minutes!

The best part about Vegetable Fried Noodles is that it’s perfect for meal-prepping.
You can make vegetable fried noodles in bulk and have them for lunch for 2-3 days.
Each bite is packed with vegetables, which are healthy and filling!
If you want to add in protein, you can also add shredded chicken, pork, spam, shrimp, or tofu!

I am using Shanghai Noodles today to make Vegetable Fried Noodles.
You can find Shanghai Noodles at T&T Supermarket, but you can also use other noodles.
Some noodles that I recommend are Yellow stir-fry noodles or udon noodles.
Cook the noodles based on instruction, rinse with cold water, and set aside.
If you use frozen udon, pour hot water over it and let it side for 5 minutes. Drain and rinse with cold water before stir-fry

Ingredients
- 450g of Noodles
- 1 cup of Cabbage (sliced)
- ½ Large Onion (sliced)
- 5 stalks of Celery (cut into thin strips)
- ½ Carrot (shredded)
- 1 Small Zucchini
Sauce
- 4 tbsp of Soy Sauce
- 2 tbsp of Sesame Oil
- 2 tbsp of Honey
- 1 tsp of Black Pepper
SHOP THE INGREDIENTS
- Mix soy sauce, sesame oil, honey, and black pepper. Set aside
- Prepare noodles based on the instruction.
- Drizzle in around 1-2 tbsp of oil, and turn the heat up to medium-high.
- Once the pan is hot, add celery and onion. Saute together for 1-2 minutes.
- Next, add carrots, cabbage, and zucchini, and saute for another 2-3 minutes.
- Add the noodles, drizzle in the sauce, cover and let it sit for 2-3 minutes.
- Turn the heat up to high, and saute on high heat for another 2-3 minutes.
