Bok Choy: Easy Vegetarian Dinner Staple
I will be honest; I am not a big vegetable person. However, this Spicy Garlic Bok Choy is always on my dinner menu. Not only is it quick to prepare, but the bok choy also tastes fantastic the next day after soaking up all the sauce. It’s a perfect recipe for meal prepping.

Spicy Garlic Bok Choy Ingredients
- 2 lb of Bok Choy
- 1 tbsp of Oil
- 1.5 tsp of Salt
Spicy Garlic Sauce
- 7 cloves of Garlic minced
- 1 stock of Green Onion chopped
- 2 tbsp of Vegetarian Oyster Sauce
- 1 tsp of Sugar
- 2 tbsp of Korean Red Chili Flakes
- 1.5 tbsp of Black Vinegar
- 1 tbsp of Sesame Seeds
- 4 tbsp of Oil

Bok Choy
My mom taught me an easy trick to keep bok choy tender and bright green every single time. The key is to add a little bit of oil and salt before you blanche. It keeps the color nice and bright!
Depending on the texture you like for your bok choy, you can adjust the cooking time. I like my Bok Choy soft but still slightly crunchy.

Spicy Garlic Sauce
Let’s talk about the SECRET SAUCE, the superstar in my 10 Minute Spicy Garlic Bok Choy. You need a few simple ingredients: garlic, vegetarian oyster sauce, green onion, black vinegar, a pinch of sugar, Korean red chili flakes, and sesame seeds. You don’t have to always make this dish with bok choy, because this sauce goes well with ANY vegetable!
I tend to use the vegetarian oyster sauce for any vegetable dishes, or as a dipping sauce because it is less salty and slightly sweet. It’s perfect for this dish, because it’s sweeter flavors can balance out those spicy chili flakes.

Step By Step Process for Spicy Garlic Bok Choy
- Prepare the Bok Choy by cutting it in half. If the Bok Choy is quite large, cut it in half again.
- Bring a pot of water to a simmer and add 1 tbsp of oil and 1.5 tsp of salt. Blanch the Boy Choy for 3-4 minutes. You want it to be soft yet still crunchy. Set aside.
- Mix chopped garlic, white parts of the green onion, vegetarian oyster sauce, sugar, Korean red chili flakes, black vinegar, and sesame seeds in a bowl.
- Heat 4 tbsp of oil, and once the oil is hot, pour it into the bowl.
- Drizzle the sauce over the bok choy, and enjoy!

Man, I’ve tried so many recipes online to varying degrees of success. Your recipes have always knocked it out of the park with the rare easy, flavorful and no specialty pantry items needed. I’m sure I’ll run into the occasional here that will require extensive prep and a menagerie of pots/pans/chinoise/etc… but so far 💪🏻
