The key to keeping your Spicy Garlic Bok Choy nice and green is to add a little bit of oil and salt before blanching.
This simple step keeps the Bok Choy soft and preserves all the color. My mom taught me this trick when I first learned how to cook.
Depending on the texture you like for your bok choy, you can adjust the cooking time. I like my Bok Choy soft but still slightly crunchy.
Let’s talk about the SECRET SAUCE, the superstar in my 10 Minute Spicy Garlic Bok Choy.
You need a few simple ingredients, garlic, vegetarian oyster sauce, green onion, black vinegar, a pinch of sugar, Korean red chili flakes, and sesame seeds.
I tend to use the vegetarian oyster sauce for any vegetable dishes or as a dipping sauce as it is less salty and slightly sweet.

Ingredients
- 2 lb of Bok Choy
- 1 tbsp of Oil
- 1.5 tsp of Salt
Spicy Garlic Sauce
- 7 cloves of Garlic minced
- 1 stock of Green Onion chopped
- 2 tbsp of Vegetarian Oyster Sauce
- 1 tsp of Sugar
- 2 tbsp of Korean Red Chili Flakes
- 1.5 tbsp of Black Vinegar
- 1 tbsp of Sesame Seeds
- 4 tbsp of Oil
- Prepare the Bok Choy by cutting it in half. If the Bok Choy is quite large, cut it in half again.
- Bring a pot of water to a simmer and add 1 tbsp of oil and 1.5 tsp of salt. Blanch the Boy Choy for 3-4 minutes. You want it to be soft yet still crunchy. Set aside.
- Mix chopped garlic, white parts of the green onion, vegetarian oyster sauce, sugar, Korean red chili flakes, black vinegar, and sesame seeds in a bowl.
- Heat 4 tbsp of oil, and once the oil is hot, pour it into the bowl.
- Drizzle the sauce over the bok choy, and enjoy!

Materials
- 2 lb of Bok Choy
- 1 tbsp of Oil
- 1.5 tsp of Salt
