Home Style Tomato Egg Stir Fry with Beef

I think we can all agree that tomato and beef is one of the best combos ever. But also, nothing beats a classic steak and eggs. So, I thought, why not combine everything together? With tomato, eggs, and beef, this dish turns into the coziest meal made in just one pot!

Tomato and Egg Stir-Fry itself is one of the most beloved home-style dishes across Chinese households. It’s simple, comforting, and always reminds me of home. Adding beef turns it into a heartier, high protein version that you might find at a restaurant as a saucy rice dish. This feels just as at home on the dinner table as it does on the menu at a Hong Kong diner, or 茶餐廳 cha chaan teng.

Tomatoes

Since I had so many leftover tomatoes from making Taiwanese Beef Noodles yesterday, I wanted to cook with them again today. Tomatoes really are the star of this dish! Their natural sweetness balances the savory beef and eggs, while their tangy flavor adds a burst of brightness. I also love how they add that vibrant red to the plate that makes this stir fry look as good as it tastes. Beyond the flavor and color, tomatoes are also packed with antioxidants, Vitamin C, potassium, and Vitamin K.

For saucy dishes like this, I usually reach for beefsteak, roma, or cluster tomatoes, since they’re sweeter and help create that rich, velvety sauce that ties everything together.

Velvety Marinated Beef

I like using Angus Beef Chuck Flat steak for my stir fries, but cuts like sirloin, New York strip, tenderloin, or rib-eye also work beautifully. These have more marbling and fat, so the beef naturally turns out more tender and flavorful. That being said, I’ve got a few tips for you, so no matter what cut you use, the beef turns out juicy and delicious every time.

Tip For Easy Cutting

One pro tip is to freeze the beef for about 30 minutes before slicing. It firms up just enough to make clean, thin cuts. Always slice against the grain and on a slight diagonal. This shortens the muscle fibers and keeps each piece tender instead of chewy.

Velveting for Extra Juicy Beef

The next step is velveting, which is what really makes restaurant-style stir fry beef so tender. I marinate the beef with oyster sauce, oil, and black pepper, with some corn starch as well. The corn starch forms a light coating that locks in juices, while the oil prevents sticking and helps the beef sear evenly. This quick marinade not only tenderizes but also infuses flavor.

My Secret Tangy savory sauce

Every household has its own take on the sauce for Tomato Egg Beef Stir-Fry. My family’s secret ingredient was always ketchup, which adds a concentrated tomato flavor while balancing the natural sourness of fresh tomatoes. I like building on that by adding soy sauce for savoriness and depth, plus a pinch of white pepper for a subtle heat that keeps the flavors lively. A quick cornstarch slurry ties it all together into a glossy, velvety sauce that not only coats the beef, eggs, and tomatoes, but also clings to every grain of rice

How To Make Stir Fried Tomato Eggs and Steak

  1. Marinate sliced steak with oyster sauce, oil, black pepper, and cornstarch.
  2. While the meat is marinating, mix eggs in a bowl and season with salt. Scramble until they’re fluffy and about 90% cooked. Set aside.
  3. In the same pan, sauté marinated beef for 5 to 6 minutes until it’s almost fully cooked. Set the beef aside.
  4. Next, toss in fresh tomatoes and cook until they release their juices.
  5. Season with garlic, soy sauce, white pepper, and ketchup. Let it simmer for 2 to 3 minutes.
  6. In a bowl, mix corn starch and water. and stir in the cornstarch slurry into the pan to thicken everything up.
  7. Finally, add the eggs and beef back into the pan. Mix well and let it simmer for another couple minutes.
  8. Garnish with chopped green onions. Serve hot with rice or noodles.

This recipe was so easy to make and was FANTASTIC as leftovers. Even a little bit of the sauce, eggs, and meat can turn a bowl of rice into something special!

  2. This was great! Just a note for others that wasn’t clear to me is to remove the meat in step 3 after cooking lol I was not sure and just added the tomatoes in. I didn’t realize I was suppose to remove the meat until step 7 😛 luckily the meat stayed tender but I’ll know for next time!

    1. Hi Debbie! Thank you for catching this, you’re correct! The beef should be set aside after step 3. I’ve corrected the steps! I’m glad the recipe still worked out for you!
