It changes this fried rice from a simple steak rice to a flavor that’s just like the Sizzling Night Market Black Pepper Steaks in Taiwan. It’s so flavorful and satisfying! When I’m craving a meaty bite of steak but still want to eat it with a comforting rice dish, this fried rice is what I make.

Perfect Fried Rice with Cold Rice

A good bowl of fried rice is described as “粒粒分明” in Taiwan: every single grain of rice is visibly separated and coated in oil. The key to great fried rice, with perfectly coated and separated rice grains, is COLD COOKED RICE, which prevents the fried rice from becoming overcooked and soggy. 

To store my leftover rice in the fridge, I flatten it out in a resealable bag. Overnight in the fridge, the rice grains harden and are perfect for fried rice! Before cooking, remember to break up your cold rice to make the perfect fried rice.

Secret Ingredients To Tender Steak in Fried Rice

The key to the BEST steak bites in your Steak Fried Rice is to ensure that the steak is not overcooked. The perfect steak bite should be tender and juicy. Today, I am using Angus Beef Chuck Flat, but you can use any steak cut to make this steak fried rice.

The secret to tender beef cubes without overcooking is baking soda. I got this secret from a good friend who works at a Chinese restaurant; it is honestly a game-changer. No more eating tough beef at home, and hello to juicy, tender steak bites in your fried rice!

Steak Fried Rice Ingredients

  • 1 piece steak 8oz. cut into cubes
  • 1 tsp black pepper
  • 2 tbsp soy sauce
  • 0.5 tsp baking soda
  • 1 tbsp oil
  • 2.5 cups cold cooked rice
  • 1 cup frozen veggie
  • 2 eggs
  • 2 stalks green onion chopped (separated whites and greens)
  • 1 tbsp garlic minced
  • 4 tbsp Sizzling Black Pepper Sauce

How To Make Black Pepper Steak Fried Rice

  1. Season the steak with black pepper, soy sauce, baking soda and oil.
  2. Let the steak set for 30 seconds and pan-fry for 2-3 minutes, remove and set aside.
  3. In the same pan add in white parts of the green onion, and garlic. Sauté for 30 second.
  4. Drizzle in the egg, scramble everything together before adding in cold cooked rice and frozen veggie.
  5. Sauté for 2-3 minutes, then add in green onion, steak, and black pepper sauce.
  6. Sauté on high heat for 1-2 minutes, and serve.
