With only a few simple ingredients, I promise once you give it a try, it will also be part of your weeknight dinners.
Tomato and Egg Stir Fry: A Weekly Go-To Dish
Tomato and Egg Stir-Fry is an easy a weekly go-to dish for anyone from a broke full-time college student to a savvy housewife. The ingredients are easy to find and super affordable. This tomato recipe’s 10 minute cook time makes it the easiest way to have a home cooked meal.
When I first moved out to university, I was so buy with school, but still super homesick for homemade Taiwanese food. Between busy schoolwork and being away from home, this Tomato and Egg Stir Fry not only saved me time, it cured my homesickness.

Egg Tomato Stir Fry Ingredients
- 4 Large Tomatoes Cut into Small Wedges
- 5 Eggs
- 2 Green Onion chopped
- 1 tbsp Ketchup
- 1 tsp Sugar
- 1 tsp Salt
- 1 tsp White Pepper

Tomatoes
The star of this dish is of course, the tomatoes. Tomatoes are rich in antioxidants, Vitamin C, potassium, and Vitamin K, and their sweetness is key for this dish. I typically use beefsteak, roma, or cluster tomatoes since they typically have a sweeter flavor and are great for saucy dishes like this.
If you have any picky eaters in your home, this is an excellent way for them to get their vegetable intake in. It was always my mom’s secret trick of getting me to tomatoes. I promise your family will love it too.

Ketchup
Every household has its take on Tomato and Egg Stir-Fry. My mom’s secret ingredient that makes this dish extra tasty is a pinch of sugar and some Ketchup. Ketchup adds a more concentrated tomato flavor while balancing out the sourness of the fresh tomatoes.
If you prefer to have less “saucy,” you can also reverse the steps by frying the eggs first, removing them, sauté the tomatoes, and mixing the eggs in afterward.

Step by Step Guide To Tomato and Egg Stir Fry
- In a bowl, crack five eggs and add salt and white pepper. Whisk till eggs are thoroughly beaten
- In a pan, drizzle in oil and turn the heat up to medium-high and add in the green onion’s white parts. Saute together for 1-2 minutes
- Next, add the tomatoes, ketchup, and sugar and statue together for 1-2 minutes. Put the lid on and let it cook for 3-4 minutes.
- Pour in the egg mixture and let it set for 30 seconds. After 30 seconds, lightly stir and let it set for another 30 seconds. Finally, turn the heat up to high and saute for 1 minute or until the egg is fully cooked.
