Welcome to Day 11 of Cooking 20 Minute Dinner for 21 Days! Today we are making a one-pot vegetarian childhood dish that I grew up eating – Chinese Tomato and Egg Stir-Fry. Tomato and Egg Stir-Fry is healthy, delicious, affordable, fast, and easy to make! I always have bowls and bowls of rice with Tomato and Egg Stir-Fry; you will never believe how flavourful this dish is! With only a few simple ingredients, I promise once you give it a try, it will also be part of your weeknight dinners.
When I first moved out to university, I was super homesick but also really busy with school Tomato and Egg Stir-Fry was a weekly go-to dish. The ingredients are easy to find and also super affordable for a full-time college student. I love to pair Tomato and Egg Stir-Fry with a big bowl of rice and if I have any leftovers, I love eating it for breakfast the next day as well!
Every household has its take on Tomato and Egg Stir-Fry. My mom’s secret ingredient that makes this dish extra tasty is a pinch of sugar and some Ketchup. Ketchup elevates the flavor and balances out the sourness of the tomatoes. If you prefer to have less “saucy,” you can also reverse the steps by frying the eggs first, removing them, saute the tomatoes, and mixing the eggs in afterward.
If you have any picky eaters in your home, this is an excellent way for them to get their vegetable intake in. Tomatoes are rich in antioxidants, Vitamin C, potassium, and Vitamin K! It was always my mom’s secret trick of getting me to tomatoes, and I promise your family will love it too.
4 Large Tomatoes (Cut into Small Wedges)
5 Eggs
2 Green Onion (chopped)
1 tbsp of Ketchup
1 tsp of Sugar
1 tsp of Salt
1 tsp of White Pepper
- In a bowl, crack five eggs and add salt and white pepper. Whisk till eggs are thoroughly beaten
- In a pan, drizzle in oil and turn the heat up to medium-high and add in the green onion’s white parts. Saute together for 1-2 minutes
- Next, add the tomatoes, ketchup, and sugar and statue together for 1-2 minutes. Put the lid on and let it cook for 3-4 minutes.
- Pour in the egg mixture and let it set for 30 seconds. After 30 seconds, lightly stir and let it set for another 30 seconds. Finally, turn the heat up to high and saute for 1 minute or until the egg is fully cooked.
