Classic Egg Fried Rice: Better Than Takeout!

Egg fried rice is a simple recipe that you can enjoy for breakfast, lunch, or dinner, the perfect side dish or main entree for every meal. HOT TAKE, but I REFUSE to pay for fried rice. Especially when you can make a better-than-takeout version at home in less than 15 minutes! Five years ago, I shared this egg fried rice recipe and somehow it ended up getting over 20 MILLION views.
What I love the most about fried rice is the ability to tailor it with anything you have in the fridge. This egg fried rice is super easy to make at home and extremely delicious. It’s the perfect carb to have to for any meal.

Essential Ingredients For Easy Fried Rice
- 4-5 cups Cold Cooked Rice
- 6 Green Onion chopped , separate whites and greens
- 5 Whole Eggs
- 1 tsp Sugar
- Salt
- 2 tsp White Pepper
- 5 tbsp Oil
- 2.5 tbsp Vegetarian Oyster Sauce
- 1.5 tbsp Soy Sauce
- 2 cups Frozen Vegetable

Quick Fried Rice Tips
In Taiwan, the perfect Egg Fried Rice is when you can see every single grain of the rice coated in oil and sauce. Here’s a few tips to help you achieve that “粒粒分明“, or “every grain clearly separate” standard for fried rice:
- Cold Rice: Nothing is more important than COLD COOKED RICE for your fried rice, so it doesn’t become mushy. So, whenever I have extra cooked rice, I store it in a flat layer in a ziplock back. Before cooking, wet your hands under the sink, and break the rice apart before frying to cut down the cooking time.
- Lots of Oil: Super delicious fried rice needs a generous amount of OIL. The more fat you add, the easier it is the “fry” the fried rice. This step prevents the rice from getting soggy. If you have duck lard at home, it is also a great oil to use.
- Infused Aroma: I season the oil by sauteing with the white parts of the green onion first before adding in the egg. This adds that extra green onion flavor into every single grain of rice.

Vegetables and Protein For Egg Fried Rice
I like keeping it simple with just frozen vegetables, eggs, and green onion for my Egg Fried Rice. However, this is a great base recipe to use for adding other protein of your choice, like chicken, pork, beef, or shrimp. You can also add in other vegetables as well, like broccoli, water chestnut, or spinach. It’s a great recipe to clean up the fridge, or sneak in some extra fiber.

Secret Sauce for Egg Fried Rice
We use vegetarian oyster sauce, soy sauce, sugar, and white pepper for the Fried Rice seasoning. You may be surprised to see sugar in the mix, but, trust me. Traditionally, the perfect seasoning ratio for fried rice is always 2:1:1 of salt, sugar, and MSG. Sugar helps balance out the saltiness and gives you restaurant-style quality fried rice, and I never miss it!

How To Make Egg Fried Rice
- In a bowl, whisk 5 whole eggs with 1 tsp of white pepper and season with salt.
- Turn the heat up to medium-high and add in 5 tbsp of oil. Once the oil is hot, add white parts of the green onion and your eggs.
- Let the egg sit for 30 seconds and then fry for 2-3 minutes, breaking the egg apart.
- Add in frozen vegetables, scramble for 1-2 minutes.
- Turn the heat to high, add cold-cooked rice, 1 tsp of white pepper, soy sauce, vegetarian oyster sauce, and sugar. Saute together for 2-3 minutes.
- Add in green onion, sauté for another 1-2 minutes.

Ingredients

Instructions
