This Ikura Don or Salmon Roe Rice Bowl, is the brunch of my dreams! Ikura is one of my favorite sushi toppings, and today I have a ton of it thanks to my friend! To properly enjoy this fresh salmon egg, I decided to make this ikura rice bowl for brunch. Briny, rich, and fatty, these salmon roe pop and melt into each bite of hot white rice wrapped in crispy seaweed. Ikura Rice Bowl For Brunch

If you love ikura at sushi restaurants like me, this Ikura Rice Bowl will be the best way for you to indulge in as much salmon roe as you’d like at home. Starting with a steaming bowl of rice, I covered the top of the bowl with freshly cured ikura. I finishe the meal with crispy seaweed, miso soup, and some of my favorite side dishes. Of course, you can eat this meal anytime – but brunch is my favorite.

To enjoy, scoop a bit of ikura rice bowl into crispy seaweed, wrap it up, and take a bite! It’s super delicious and fun to eat! The salmon roe pops in your mouth with every bite, making it such a rich, umami-packed bowl!

Fresh Ikura From My Friends

Ikura sushi is my favorite – so i was so excited when my friend texted me this week that they have fresh ikura for us! I figured hot rice with fresh ikura, pickled radish, and jammy eggs will be the perfect brunch combo. So, I actually went to pick up some extra radishes and eggs, and made my pickled radish and Taiwanese marinated eggs. Because it was getting colder, I also made a quick miso soup to really complete the meal.

What To Eat with Ikura Rice Bowl

To complete my brunch, I added some crispy seaweed, miso soup, and side dishes to balance it out. Today, I paired it with an easy Taiwanese soy marinated egg and a pickled radish, both made a day ahead! Some other side dishes you should consider adding to your brunch include Korean Spinach Salad, Garlic Cucumber Salad, and Cold Tofu with Century Egg.

What Is Ikura?

If you’ve been to a sushi restaurant, you’ve probably tried Ikura before. Ikura is the bright orange, pearl-sized salted salmon eggs served on sushi, or as garnish on a dish. They look like little gems on your dish, but they’re actually packed with Omega 3 fatty acids, Vitamin D, and Vitamin B12.

Different from the other fish egg ingredients you see at sushi restaurants like masago or tobiko, Ikura is much larger in size, and each individual egg pop with fatty salmon flavor as you bite into them. It’s a healthy and luxurious way to get fatty acids in your diet.

Other Ways To Enjoy Ikura At Home

A rice bowl is not the only way to enjoy some freshly cured salmon roe. Ikura is a great flavor to add on any salmon or egg-based dish. For example, putting a scoopful of ikura on top of your Tamagoyaki makes it instantly fancier, and the flavors richer. If I’m hosting, I love adding ikura as a garnish to Seared Salmon Nigiri or Sushi Bake to make them a little more eye-catching.

The briny flavors of ikura makes it particularly delicious with any creamy pastas. Next time, put a bit of ikura on top of Miso Mushroom Pasta or Creamy Chicken Udon for a umami burst!

  • 1.5 Cup Fresh Ikura
  • 1 bowl hot rice
  • 1 pack crispy seaweed
  • green onion chopped, garnish
  • 1 bowl Miso Soup
  • Your Favorite Side Dishes
  1. On a bowl of hot rice, pour fresh ikura on top, making sure to cover the top of the rice.
  2. Garnish the bowl with chopped green onion.
  3. Serve with crispy seaweed, miso soup, and side dishes.
