My favorite dish at any holiday get together is definitely mashed potatoes. They’re always so creamy, rich and comforting and such a crowd pleaser. Every family has its own idea of what makes the perfect mashed potato—whether it’s a rustic, skin-on version or a velvety smooth purée—but for me, it’s all about achieving that extra fluffy, buttery goodness that melts in your mouth with every bite.
Whether you’re pairing them with a hearty roast, like my prime rib, or letting them shine alongside other holiday favorites like roasted vegetables or cranberry sauce, they’re the glue that binds the meal together. And the best part? They’re so easy to make, yet they always feel indulgent and luxurious.

Making A 6 Course Feast In Honor Of My Dad
This holiday season was particularly hard for our family since it’s the first one without our Dad. Instead of curling up with take out, which was my first plan, I decided to cook a 6 course feast for our whole family to honor his memory. He LOVED food and believed every shared bite of food represented love, connection, and gratitude and what better way to have him here with us in spirit.
For our feast, I made this rich and buttery Parmesan Chive Mashed Potatoes, along with my cheesy garlic bread, to pair with the juiciest Prime Rib. This potato soaked up all the delicious drippings and gravy from the prime rib, and it’s just so decadent.
The Right Potato for Mashed Potatoes
If you’ve ever been intimidated by the idea of making mashed potatoes that live up to everyone’s expectations, don’t worry. I’ve perfected my method over the years, and it all starts with choosing the right potatoes.
Yukon Golds are my go-to for their natural creaminess and high starch content. They don’t absorb as much water as a Russet potato, which can give you a more mushy texture if overcooked. If you don’t have Yukon Gold, Russet potatoes or red potatoes are both good choices.

What To Add To Mashed Potatoes
Mashed potato is such a versatile food, because you can add in one ingredient and turn it into a new flavor. Today, we went with Parmesan Cheese and chives to give our mashed potatoes a savory, herby twist. I love the tangy umami the Parmesan cheese adds. It’s a simple combination that goes great with the bright and robust flavors of the rest of our meal of salad, Spicy Shrimp Pasta, and juicy Prime Rib.
There are so many ways to make them your own. From roasted garlic to crispy bacon, or with gravy, the possibilities are endless—just pick what sounds good and run with it!

Chive Mashed Potatoes Ingredients
- 4-5 Yukon Gold Potatoes
- ¼ Cup Butter
- ¼ Cup Heavy Cream
- 1 Tsp Salt
- ¼ Cup Parmesan Cheese
- Chopped Chives for Garnish

How To Make Easy Mashed Potatoes
- Boil peeled and cut potatoes in salt water until tender.
- Drain potatoes and set aside.
- Roughly mash the potatoes until smooth.
- Mix in butter, heavy cream, and a pinch of salt, and mash until they’re super soft and creamy.
- Fold in some shredded Parmesan cheese for the extra flavor.
- Sprinkle on chives and serve.
