If you never tried Homemade Miso Butter, you are missing out! Miso Butter makes a perfect condiment to serve with protein, potatoes, pasta, and even as a marinade. Miso paste is salty and packed with umami flavors; a little bit goes a long way. Not only is Miso Paste delicious, but it is also SUPER healthy. Miso Paste is a fermented ingredient that is good for your guts; it is also filled with rich minerals and has tons of antioxidants. I recommend using either white miso paste or dashi miso paste. However, any will work. You can find Miso Paste at your local supermarket’s refrigerated section, typically near the tofu and kimchi section.
The secret to making fluffy and crispy potatoes is to always boil than broil. Make sure ALWAYS to salt the water to season the potatoes while you are cooking them. I like my potatoes to be fluffy and soft with crispy edges; however, if you prefer your potatoes extra crispy, separate each potato in a larger tray before broiling them.

Ingredients
2.5 lb of Little Potatoes
7 tbsp of Melted Unsalted Butter
3 cloves of Garlic (grated)
2 tbsp of Miso Paste
1 tsp of Black Pepper
1 tsp of Salt
Green Onion & Sesame Seeds to Garnish
- In a pot, add in potatoes and fill the pot with water. Add in 3 tbsp of salt and boil the potatoes for 20-25 minutes or until potatoes are soft. Drain the potatoes and set them aside.
- In a bowl, mix melted unsalted butter, grated garlic, miso paste, black pepper, and salt. Taste to see if you need any more seasoning; if not salty enough, add .5 tbsp of Miso Paste (every brand is different)
- Drizzle Olive oil all over the baking pan and add in drained potatoes. Use a flat surface and smash all the potatoes down and drizzle miso butter all over the potatoes.
- Broil the potatoes in the oven for 6-7 minutes or until it is crispy brown. Garnish with green onion and sesame seeds, and enjoy!
