1 Chicken Wing Dish and 2 Veggie Sides Under 30 Minutes

Let’s make 3 dishes for dinner in under 30 minutes! Today, we’re having Taiwanese 3 Cup Chicken as a main dish. Because 3 Cup Chicken is a meaty, saucy protein dish, I want to pair it with somerefreshing, high-fiber sides that won’t take any extra cooking time. Today, I’m choosing both a familiar staple in our rotation, Garlic Smashed Cucumber Salad, plus an internet-viral recipe, the Yamitsuki Cabbage. In order to finish these 3 dishes quickly, I’m multitasking between these three recipes, and I’ll share how I did it below!

3 Cup Chicken Wings

Our main dish today is 3 Cup Chicken Wings. It’s a delicious way to cook an affordable protein option. This saucy chicken is so good served with rice. So, I made sure to make some of my Purple Multigrain Rice as well. It cooks relatively fast and the steps are fairly straight forward. Since it’s our only cooked dish, we’re planning our cooking process by starting with this chicken. Once I put the lid on to let it simmer for 10 minutes, I can move on to make the other vegetable side dishes. After the vegetables are done, I’ll uncover it, add the basil and chili, and let it finish cooking.

  • 1.5 lb chicken wings and drumettes
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 8-10 cloves garlic sliced
  • 1 thumb-sized piece ginger sliced
  • 2-3 Thai red chilies sliced (adjust to spice level)
  • 1 cup Thai basil leaves

Garlic Smashed Cucumber

While the chicken is cooking, I’m making my Garlic Smashed Cucumber Salad. This cucumber is back to being my weekly obsession, and I’m making it ALL THE TIME right now. It’s the best side dish to add a refreshing bite into any meal. Since it takes only a few minutes, I can make this quickly while my chicken wings are cooking. To make it more refreshing, you can put it in the fridge while making the salted cabbage so it will be nice and cold while serving.

Japanese Cabbage Salad

I keep seeing this Japanese Cabbage Salad online, and I had to make it for dinner. This Shio Kyabetsu, or Yamitsuki Cabbage, is a quick salted cabbage that is aIzakaya classic side dish. Because it’s raw cabbage, it has extra gut-friendly benefits plus a ton of fiber. I love this recipe because there’s no cooking, and the longer it sits in the seasoning, the better it tastes! After mixing, you can let this cabbage salad sit while you finish cooking the chicken wings.
