It is a staple sandwich that takes less than 5 minutes to make with only FIVE ingredients. It may just seem like any other sandwich but trust me; there is a reason why when tourist gives Taiwanese Breakfast Sandwich a try that will have it EVERY SINGLE DAY during their trip. The classic Taiwanese Breakfast Sandwich has fresh cucumber, a thin layer of mayo, slices of ham, and a perfectly fried egg! Japanese Mayo is the key to making Taiwanese Breakfast Sandwich; people often ask me the main difference between western mayo and Japanese mayo. Japanese mayo is alot more “eggy” and has more of a custard-like texture since it is made with only egg yolks. It has a slight tang since it is made with also rice vinegar. I highly recommend getting Kewpie Mayo since it is the ONLY Asian mayo that I swear by. I will link it here on my website, or find it at most grocery markets in the Asian aisle.
Ingredients
4 slices of Bread (preferably asian milk bread)
3 thin slices of Ham
1 Egg fried
3 tbsp of Japanese Mayo
2 tbsp of sliced cucumber
- Cut the crust off the bread
- Add in 1 tbsp of japanese mayo on the first slice of bread and spread. Add in sliced cucumber and add on the second slice of bread
- Add in 1 tbsp of japanese mayo and spread apart and add on fried egg. Add on the 3rd slice of bread
- Spread 1 tbsp of japanese mayo and add in sliced ham and finish with final slice of bread. Cut diagonally and enjoy!
