Key To Taiwanese Breakfast Sandwich: Japanese Mayo

Japanese Mayo is the key to making A Taiwanese Breakfast Sandwich. People often ask me, “What’s the main difference between western mayo and Japanese mayo?” Japanese mayo is a lot more “eggy” and has more of a custard-like texture since it is made with only egg yolks. It has a slight tang since it is made with rice vinegar. I highly recommend Kewpie Mayo: it is the ONLY Asian mayo that I swear by. You’ll be able to find it at most grocery markets in the Asian aisle.
