Sukiyaki: Easy Japanese One Pot Beef Hot Pot

Make One Pot Japanese Sukiyaki with me from leftover ingredients from my Mom’s birthday celebration! This week is my mom’s birthday, and after our feast, we still had plenty of ingredients left. To clear some of these out, we’re making Sukiyaki, one of Japans’ favorite hot pots! Sweet, savory, and full of veggies, this easy beef hot pot will be an easy weekend meal for you and your family!

Clearing The Fridge with Sukiyaki

This week is my mom’s birthday celebration, and we made a HUGE FEAST! Our spread included a ton of shrimp and vegetable tempura as well as cold soba, sushi, and karaage. I bought a TON of ingredients in preparation for our huge feast, and now I have too much leftover in the fridge!

For lunch today, the goal is to clear out the fridge with an easy, one-pot meal. I have a ton of mushrooms, cabbage, and tofu I want to use up. So, we are making one of my favorite Japanese dishes: Sukiyaki! This hot pot meal is so easy: make the sauce, and throw everything in!

The Tastiest One-Pot Hot Pot: Sukiyaki

The basic toppings for Sukiyaki usually includes various mushrooms, leafy greens like napa cabbage, tofu and sliced hot pot beef. To enjoy sukiyaki, you dip the flavorful ingredients in a raw egg as a sauce. You can add udon or vermicelli to this sukiyaki hot pot a full meal, or you can skip the noodles and eat the hotpot with a bowl of rice instead.

Although Sukiyaki is traditionally a beef hotpot, sometimes I make this dish without the hot pot beef to make it fully vegetarian, and it tastes just as good! With this sauce base of soy sauce, sugar, dashi, sake, and mirin, it tastes authentic EVERY SINGLE TIME.

Sukiyaki Ingredients

  • 1 pack Hot Pot Sliced Beef (around 250 g)
  • 1/2 pack of Medium-firm Tofu
  • 1 pack Frozen Udon
  • 4-6 Shiitake Mushrooms
  • 1 cup of Shimeji Mushrooms
  • 1 bundle Enoki Mushrooms
  • 1 small bundle of Chrysanthemum Greens (Or any leafy greens)
  • 1-2 stalks green onions (separate white and green parts)
  • 1 raw egg
  • 1 tbsp butter

Sukiyaki Sauce Base

  • 100 ml Soy Sauce
  • 50 ml mirin
  • 50 ml Sake sake
  • 1 tablespoon sugar
  • 1 tsp dashi stock
  1. Mix soy sauce, sugar, mirin, dashi stock, and sake for the sukiyaki sauce base.
  2. In a pot, melt butter and add green onions. Saute for 1-2 minutes.
  3. Add all your vegetables, tofu, mushrooms, and meat into the pot
  4. Drizzle the sukiyaki sauce base onto the ingredients.
  5. Cook for 2-5 minutes or until ingredients are fully cooked. Serve with a raw egg as dipping sauce.

  • 1/2 pack Medium-firm Tofu

  • 1 pack Enoki Mushrooms
  • 1 bundle Chrysanthemum Greens small bundle, Or any leafy greens
