Itโs a super light, and only takes 5 minutes! I like to add all sorts of ingredients, like greens and mushrooms, to bulk it up a bit. Youโre going to love how easy it isโminimal effort, maximum comfortโ.

- 5ย cupsย chicken stock
- 1ย canย Sweet Corn
- 2ย Tbspย Sesame Oil
- 2ย thin slices of Ginger
Egg Mixture
- 4ย Large Eggs
- 1ย Tspย Salt
- 1ย tspย White Pepper
- 1ย Green Onionย separate white and green
Corn Starch Slurry
- 2ย tbspย Corn Starch
- 1ย tspย White Pepper
- 1ย tspย Salt
- 2ย tbspย water

Crispy Cheesy Curry Croquettes
These Crispy Curry Croquettes are a fun, indulgent snack that I whip up whenever I need something cheesy and crispy with a bit of a kick. I love crunching into a croquette, and breathing in that aroma of Japanese-style curry mashed into potato filling. Once you fry them up, the crispy exterior combined with the with a gooey cheesy center is just perfectโespecially when you need a snack thatโs both comforting and exciting.

- 2.5lb of Russet Potatoes (peeled and cut into chunks in similar size)ย
- 1 tbsp of Saltย
- 1.5 onion (chopped)ย
- 1 cup of Sweet Cornย
- 2 cups of Mozzarella Cheese (cut into cubes)ย

I don’t know what it is about this Crispy Fried Garlic Tofu that brings me right back to Taiwan’s night market with my family every time. This garlic sauce is a copycat of the night market recipes, but 100x better.ย Itโs one of my favorite vegetarian dishes, because it feels indulgent without being heavy. I love serving it over rice or with some stir-fried veggies for a meal that feels like a treat, but still healthy. If you have any leftover sauce, drizzle on top of steamed vegetables, and you will thank me later!ย

- 1 pack of Medium Firm Tofu (cut into 2-inch cubes)ย
- 1 tbsp of Saltย
- 2 cups of Waterย
- 1.5 cups of Rice Flour or corn starch ย
Garlic Sauce
- 6 cloves of Garlic (grated)ย
- 2.5 tbsp ofย Vegetarian Oyster Sauceย (the best vegetarian oyster sauce!)
