Quick and Healthy Broth For Tomato Curry Udon
I love making a quick broth with tomatoes – it’s so flavorful, AND it’s healthy! Tomatoes are rich in antioxidants, Vitamin C, potassium, and Vitamin K! Cooking tomatoes also releases lycopene – a powerful antioxidant naturally found in the red color of the tomatoes. It’s also what makes your broth super red. This tomato curry soup recipe is a delicious way to get your kids to eat more veggies!
Making a base broth with tomatoes is easy. Start by chopping up the tomatoes and stir frying in the pot. Then, you can add your favorite seasoning. Today, we’re using soy sauce, ketchup, and a curry block. Finally, add water, or broth, to the pot. Now, you have a yummy tomato broth!

Noodle Soups: Add Any Topping You Like
Noodle soups always need a few toppings, in my opinion. I mean, who doesn’t love a mix and match? Adding toppings is the most fun part of the recipe. Depending whether I need to clean out my fridge, my noodle soup toppings can include anything from tofu to leftover slices of hotpot beef. The broth itself is vegetarian, so it’s a good recipe for any dietary restrictions.
Today I added an egg, fish balls, and some enoki mushrooms. My usual topping ratios is 1 egg, 1 protein, and 1 veggie. It makes for a satisfying meal every single time.

Tomato Curry Udon Soup Ingredients
- 2 tomato, chopped
- 1 tbsp garlic, minced
- 1 tbsp soy sauce
- 1 tbsp ketchup
- 1 curry cube
- 2 cups water
- 1 serving udon
- Toppings: fish balls, mushroom, egg

- Saute chopped tomatoes in a pot on medium-high for 2-3 minutes.
- Add garlic and saute for 2-3 minutes, or until fragrant.
- Add soy sauce, ketchup, and water to the pot and let it simmer.
- Add in curry cubes, mix until curry cubes dissolve, then bring it to a simmer.
- Once curry cube has dissolved, add udon and toppings.

Ingredients
- 2 tomato chopped

- 1 tbsp soy sauce
- 1 tbsp ketchup
- 1 Japanese Curry Cubes
- 2 cups water
- 1 serving udon
- Toppings of your choice I used fish balls, mushroom, egg
