Let’s make my EASY NOODLE SOUP ready in 10 MINUTES!

One of my go-to recipes whenever I am on the run, is my easy noodle soup. All you need is a few simple ingredients, and you go lunch ready in 10 minutes!

Depending on what you have in the fridge, you can customize the easy noodle soup recipe with pan-fried spam, poached egg, or fish balls.

To make my 10-minute easy noodle soup, all you need is green onion, cilantro, white pepper, sesame oil, soy sauce, and dashi powder.

If you are vegetarian, you can swap dashi powder with mushroom powder. I like my easy noodle soup spicy, so I also finish with chili oil to add spice to the flavor.

Another ingredient that I love to add but understand is not always accessible to everyone: shallot pork lard.

I have an easy recipe for shallot pork lard, and if you can access pork lard, I highly recommend adding one tablespoon of pork lard to this noodle soup. 

Easy Noodle Soup

There are many ways to customize my easy noodle soup recipe.

My typical go-to is adding pan-fried spam and eggs. Pan-fry spam with soy sauce for 2-3 minutes on each side, and using the fat, pan-fry eggs. I also LOVE adding my spicy sweet and sour fried eggs.

You can also add fish balls, pan-fried tofu, or sausages. Depending on what you like, adjust the amount of each ingredient each time you make it.

For example, I love the subtle spice white pepper has, so often, I will increase the amount of white pepper in the soup. 

Ingredients 

  • 1 serving of noodles 
  • 2 tablespoons green onion, chopped 
  • 2 tablespoons cilantro, chopped 
  • 1/2 tsp of white pepper,  
  • 1 tsp of dashi powder 
  • 1.5 tablespoon soy sauce 
  • 1 tablespoon sesame oil 
  • 2 cups of noodle water

  1. Prepare noodles based on instructions, and save 2-3 cups of noodle water
  2. Add green onion, cilantro, white pepper, dashi powder, soy sauce, and sesame oil in a bowl. 
  3. Pour hot noodle water into the bowl, and add in the noodles. 
  4. Optional, finish off with a drizzle of chili oil.
