If you have flour, salt, and water at home, you can make these delicious, chewy Hand-Cut Noodles.
You can make these hand-cut noodles in bulk and freeze them for up to 2 months.
There are endless ways to enjoy these noodles, whether with my 10 Minute Spicy Garlic Noodle recipe, Instant Pot Asian Chicken Noodle Soup, or Taiwanese Beef Noodle Soup.
One of my most asked questions is “what noodle do you use” and “where do I buy hand-cut noodles?”.
I LOVE the taste and texture of fresh noodles, so I use fresh noodles in 80% of my recipes. I live close to an Asian supermarket that sells fresh noodles, so I usually pick up fresh noodles whenever I visit.
However, this is the PERFECT recipe for those who don’t have fresh noodles close to you.
I was surprised when my mom showed me how easy it is to make fresh hand-cut noodles at home.
All you need is three simple ingredients, flour, salt, and water.
The best part about this recipe is that you can make these noodles in bulk. Having fresh hand-cut noodles is super convenient and will instantly level up any noodle recipe to restaurant-style quality.
Freezer instruction:
- After you cut the noodles, rest them on parchment paper and separate them into your desired serving sizes.
- Freeze the noodles for 1 hour; once the noodles become hard, place them into zip-lock bags.
- To cook, add frozen noodles into boiling water, separate with chopsticks, and cook for 4-5minutess or until soft.
My number one tip when it comes to making hand-cut noodles at home is to be patient.
The longer you let the dough rest, the softer the dough will become. I learned this tip from my mom, and it has been the ultimate game-changer.
Whenever the dough becomes too tough to knead or challenging to become smooth until smooth, I will cover and let it rest for 10 minutes, and after when you return, the dough will become much softer and easier to work.

Here are all the noodles recipes that pair perfectly with FRESH HAND-CUT Noodles.
