Shrimp is a lean protein that cooks quickly, and the whole dish comes together in one pot in under 30 minutes. Itโ€™s perfect for hot summer nights when we want something comforting but not heavy.

Marinated Prawns

  • 1 lb Shrimp or Jumbo Prawns 450g, peeled and deveined
  • 1 tsp paprika
  • ยฝ tsp turmeric
  • 1 tsp garam masala
  • 1 tsp Curry Powder
  • Salt & Pepper to taste
  • 1 tbsp neutral oil like avocado or canola

Curry

  • 1 tbsp oil can reuse same pan
  • 1 red onion sliced
  • 3 bell peppers sliced (any mix of colors)
  • 1 can coconut milk ~ 400ml
  • ยผ cup water optional โ€” rinse the coconut milk can to get every drop and stretch the sauce
  • ยฝ pack Japanese Curry Cubes about 2-3 blocks
  • chili flakes Optional, or fresh chili for extra heat

To Serve

  • 4 servings Steamed rice or noodles
  • Fresh cilantro or green onions optional, for garnish
