NFL Draft Party Snack Spread: 3 Easy Hosting Recipes
I made 3 easy appetizers that made hosting my NFL Draft Day Watch Party so chill AND delicious. Dom and I were so excited for Draft Day, we had to make some extra delicious snacks to go with them. Whenever I host a watch party, I make recipes that are big on flavor, easy to prepare, and fun to eat on the couch without making a total mess. And, I’m sharing my hosting prep plan, so you won’t be in a rush to cook everything an hour before everyone arrives. Trust me, they’ll be a total hit for the next game!

What I Made For My Draft Party
Creamy Cilantro Loaded Chicken Pasta Salad
This Loaded Pasta Salad has juicy seasoned chicken, crispy sausage, roasted corn, crunchy vegetables, and fusilli tossed in a creamy cilantro-lime dressing. I love making pasta salads as a party main dish. It’s packed with so many tasty ingredients, but doesn’t feel like you’re just eating a full meal! And, you can make it a day ahead!
- Prep & Timing: This is the best recipes to make ahead. You can assemble the whole salad the day before. The flavors meld together overnight. So, it tastes amazing cold straight from the fridge.
- Game Day Pro-Tip: Save a small container of extra cilantro dressing on the side. Pasta absorbs sauce as it sits in the fridge, so tossing in a quick splash right before guests arrive brings back that glossy, creamy coating.
- Serving Logistics: Set out small paper bowls or mini plates with forks nearby. It’s an easy scoop-and-go option while people walk past the kitchen counter.

Creamy Salmon Poke Nachos
What’s better than creamy salmon poke piled onto homemade crispy wonton chips, finished with Japanese seaweed salad, spicy mayo, unagi sauce, and green onion? These Salmon poke nacho brings such a WOW factor that honestly impresses my guests every time, and I’m finally sharing the recipe! The fried wonton chips hold their crunch, and make perfectly sturdy bases to scoop up all the ingredients in one bite.
- Prep & Timing: Prep each component separately ahead of time the day of your party:
- Mix the salmon poke and keep it chilled in the fridge.
- Fry the wonton chips hours earlier and keep them in an airtight container at room temperature.
- Whisk together the spicy mayo.
- Pro-Tip: You can build a single loaded platter right before the draft starts, or set up a poke nacho bar with individual bowls of chips with various poke flavors and sauces so guests can build their own!

Mini Crispy Spam Rice Balls
I’m still missing Hawaii, so I made these Mini Crispy Spam Rice Balls! These bite-sized rice balls are packed with crispy Spam, seasoned Korean seaweed, sesame, and a sweet-savory unagi sauce. They are the ultimate finger food, so there’s no need for utensils! That sweet-saltiness pairs perfectly with a sip of ice-cold beer!
- Prep & Timing: These are best rolled fresh. You can fry the tiny Spam cubes earlier in the day, but wait to roll them while the rice is still warm so everything sticks together smoothly.
- Make Ahead: If you need to make them a couple of hours before kickoff, pile them onto your platter and cover the entire dish tightly with plastic wrap. This prevents the rice from drying out at room temperature.
- Game Day Pro-Tip: Keep them small (around 1.5 to 2 tablespoons each) so they can stay single-bite and won’t fall apart while eating!

Draft Party Preparation Game Plan
I really really hate rushing to make everything when I’m also welcoming my guests. So, here’s the game plan that I use to make hosting super easy so I can be present for the show with my guests!
- Day Before: Cook, dress, and chill the entire Loaded Chicken Pasta Salad.
- Morning Of: Fry the wonton chips, mix the spicy mayo, and chop the ingredients for the salmon poke.
- 1–2 Hours Before Kickoff: Fry the Spam, mix with warm seaweed rice, roll the Mini Spam Rice Balls, and cover tightly.
- Right Before Draft Starts: Toss the salmon poke, assemble the wonton nachos platter, refresh the pasta salad with an extra splash of dressing, and set everything out!
