I made this tonight after seeing it on TikTok. It did not disappoint!! It would be a great clean the fridge out recipe as well since I added bell peppers and Brussels sprouts that I had in the fridge and it was just as yummy. I also added some chickpeas for more protein. This is now in my rotation of meal prep for sure!
This was great! Used rotisserie chicken that I already had, added an orange bell pepper, and did the Greek yogurt sub for mayo to keep the saturated fat lower. We ended up keeping the dressing separate to add ourselves and had to double the sauce amount to match but 100% doing this again soon. I might add some beans next time also.

I think your nutrition facts are off. One ear of corn is 17 carbs and you are using 4 ears across 4 servings. So that is at least 17 carbohydrates for the corn without adding everything else. Might want to update.

I loved this!!!! Finally a Reason to break out my new veggie box chopper! This was so refreshing and healthy tasting- I felt good about it eating it. As someone who doesn’t really like pepper and is afraid to try new things- I was pleasantly surprised how yummy all the flavors together were. One of my most reliable “throw everything together on Sunday and eat throughout the week” recipes. I like to nix the cucumber and add black beans, and throw the other vegetables in the pan with the corn for a couple minutes at the end just to lightly soften and sweat them. If you need something between jalapeños and bell peppers I recommend poblanos.
