What I Eat In A Week: Summer Cold Noodles
This week was SO HOT I had to have cold noodles 3 times! I got some fresh kimchi from the market, so the cold noodle of the day was Bibim Guksu – Korean Spicy Kimchi Cold Noodles. To add some protein, i paired it with some pan-fried pork belly, and it was the most satisfying meal!
This Bibim Guksu has every flavor you need: spicy, sour, sweet, and most importantly – ice cold. I always crave spicy cold noodles in the summer, especially after a session of Pilates. Slurping this kimchi cold noodle down is the ultimate after-gym reward. It’s healthy, tasty, AND cools you down instantly from the inside out!
Spicy Korean Cold Noodles Ingredients
- 2 servings Noodles
- 5 ounces kimchi chopped
- 1/4 cup kimchi juice optional
- 2 tbsp Korean red chili paste gochujang
- 1 tbsp korean red chili flakes gochugoru
- 0.5 tbsp sweetener optional, I like to use plum extract or you can swap for sugar
- 1 tbsp sesame oil
- 0.5 tbsp sesame seeds
- 0.5 tbsp minced garlic
- 0.5 tbsp rice vinegar optional
- 1 tbsp noodle water
- 1 cup cucumber sliced
- 2 soft boiled eggs
- Sesame seeds to garnish

Kimchi Based Spicy Sauce
Summer’s heat can make it hard to have an appetite. But, when it comes to a bowl of refreshingly cold spicy Bibim Guksu, I don’t think any one can resist. This spicy, tart sauce is made with a based of kimchi and its juice, plus gochujang and gochugaru. The sour kimchi in this spicy noodle makes makes my mouth salivate as soon as it hits my tongue! It’s balanced with sweetener, garlic, sesame oil, and sesame seeds for a savory, aromatic boost. Every bite is bright and refreshing!

Toppings For Your Cold Noodles
Classic toppings for this cold noodle includes cucumber, kimchi, pickles, Asian pear, and other toppings that adds crunch and refreshing flavors. But, the best part of making your own noodles is that you can add any topping you like. Today, I added a hard boiled egg, extra cucumber, some perilla leaf, and some daikon kimchi. You can add your favorite protein as well, like spam, chicken, or fish cakes.

How To Make Korean Kimchi Cold Noodles
- In a bowl, add kimchi and cut into small pieces using scissors.
- Next, add in Korean red chili paste, sweetener of your choice, sesame oil, sesame seeds, and mix everything together.
- Cook your noodles separately according to the packaging, and rinse it in cold water
- Add your noodles into the sauce and mix.
