For the first recipe, I will be sharing my easy 20-minute Ginger Scallion Noodles.
Savory, delicious, and easy to make at home, Ginger Scallion Noodle will be your next go-to recipe this year! All you need is a few simple ingredients, and you got your meal ready to go.
Topped with any protein of your choice, such as shredded chicken, sliced cucumber, or a fried egg.

My Ginger Scallion Noodles are inspired by Taiwanese Sesame Chicken Noodles and also Hainan Chicken.
I loved the simple yet umami sauce you get at Hainan Chicken which is packed with flavor, but I also wanted to add the warm and savory flavor of Taiwanese Sesame Chicken.
After testing the recipe a couple of times, here is my easy Ginger Scallion Noodles that are the best of both worlds.

All you need to make Ginger Scallion Noodles is green onion, garlic, ginger, sesame oil, white pepper, sesame seeds, soy sauce, dashi powder (optional), and sesame oil.
The first question I get is how to prevent sesame oil from burning and getting a bitter flavor.
The trick is to heat up regular oil with a high smoke point, such as grapeseed oil, and once the oil is hot, drizzle in sesame oil to let it roast for just 5-10 seconds before pouring it on top of the noodles.

You can use any noodles of your choice when making Ginger Scallion Noodles.
I am using wide hand-cut noodles, but you can also use udon, white noodles, ramen noodles, or any noodle of your choice.
If you are on a keto diet, I highly recommend using shirataki noodles. I also have a hand-cut noodle recipe that is super easy. You can prepare the noodles in bulk and freeze them for up to 2 months.

Ingredients
- 1 serving of noodles
- 2 tablespoons green onion, chopped
- 0.5 tablespoon grated ginger
- 3-4 cloves garlic, grated
- 0.5 tablespoon sesame seeds
- 1 tsp white pepper
- 1 tsp dashi powder or chicken powder (optional)
- 1-2 tablespoons Korean red chili flakes (optional)
- 1 tablespoon soy sauce
- 2-3 tablespoon oil
- 1 tablespoon sesame oil
- Prepare the noodles based on instruction, and set aside 1 ladle of the noodle water.
- Add chopped green onion, grated ginger, garlic, sesame seeds, white pepper, red chili flakes, sesame seeds, white pepper, and dashi powder in a bowl.
- Heat three tablespoons of oil, and once the oil is hot and smoking, drizzle in sesame oil and let it cook for another 5-10 seconds.
- Drizzle the hot oil over the bowl, and mix everything before adding soy sauce and a ladle of noodle water.
- Finally, add in the noodles, and mix to enjoy

Materials
