When I was a student, I make these ALL THE TIME because not only is it delicious, but it is also super affordable to make.
Depending on how much time you have, you can customize these noodles to your liking. Some toppings I like to pair with my Taiwanese Soy Sauce Noodles include sliced cucumber, shredded chicken, fried eggs, or pan-fried tofu!
One of my favorite condiments that I use all the time is Black Vinegar. It is a staple condiment in Taiwanese recipes, and it is also my favorite dipping sauce when paired with chili oil.
Kong Yen is the only brand of black vinegar that I swear by, and it’s the only black vinegar you will find in my family cabinets. It uses to be impossible to find in North American, and it was a must-pack item that we stocked up in whenever we went back to Taiwan. If you don’t have any black vinegar in hand, you can also mix soy sauce and rice vinegar at a 1:2 ratio.

- 1 portion of Noodles (120g)
- 1.5 tbsp of Soy Sauce
- 2 tbsp of Black Vinegar
- 1.5 tsp Sugar
- 1.5 tsp of Sesame Oil
- Chili Oil
- Green Onion
- Cilantro
- Prepare your favorite noodles.
- In a bowl, mix soy sauce, black vinegar, sugar, and sesame oil til combined. If you like it spicy, you can also add in some chili oil.
- Drain the noodles and add them to the bowl
- Garnish with cilantro and green onion.
