Lemongrass Pork Chop with Scallion Sauce

This Lemongrass Pork Chop is so flavorful – and amazing with rice! The pork chops are marinated with garlic, lemongrass, fish sauce, oyster sauce, sugar, chili flakes. It’s a great way to prep ahead for a busy day. I can marinade the meat the day before, and have delicious pork chops in 20 minutes the next day.

I love pairing this Air Fryer Pork Chop recipe with the most delicious scallion sauce on the side. It’s pretty to make: Heat up 6 tbsp of oil until smoking, drizzle over chopped green onion and salt and mix. It goes well with literally ANY PROTEIN! Sometimes, when I want to save few steps, I use the Kai Dong Four Season Scallion Sauce instead.

Air Frying Lemongrass Pork Chop

Pork chops can get a bit tough, but a few quick steps can prevent that from happening. The tendons in the pork chops can cause it to curl up when air frying, making it hard to chew. Chop the pork chop with the back of your knife to tenderize it all over. Then, cut slits along the fat to prevent the curling during cooking, and keep the pork tender.

Air Fryers are such an amazing way to cook pork. It’s mess free – and you set it and forget it! The pork chop should cook for about 12-15 minutes. Keep in mind, your air fryer strength and the pork chop size may be a little different from mine, so adjust cook time accordingly!

Lemongrass Pork Chop Ingredients

  • 4 pieces of pork chop, center cut bone-in pork chops ~1.5 inch thick
  • 8 cloves of Garlic, minced
  • 2 ½ tbsp of minced Lemongrass
  • 2 tbsp Fish Sauce
  • 1 tbsp oyster sauce
  • 1 tbsp of Sugar
  • 2 tsp of Chilli Flakes (optional)
  • 1 tsp of Salt
  • 6 tbsp of Oil
  • 3 stalks of Green Onion, chopped
  1. Using the back of your knife, slightly flatten the pork chop on both sides. Cut slits along the fat – this will prevent the pork chops from curling up when air frying
  2. Marinate the pork chops with garlic, lemongrass, fish sauce, oyster sauce, sugar, chili flakes (optional) for at least 1 hour, or overnight
  3. Air fry the pork chops at 400F for 12-16 minutes, flipping halfway through or until the internal temperature reaches 140F.
  4. In the meantime, make the sauce. In a bowl, add chopped green onion and salt on top. Heat up 6 tbsp of oil until smoking, drizzle over the green onion and salt. Mix well.
