How Is Japanese Mayo Different From American Mayo?

Whatโ€™s the difference between Japanese and American Mayo? Theyโ€™re made with similar ingredients, but thereโ€™s a few major differences:

  1. Egg Yolks Only: Japanese mayo is only made with egg yolks. It makes the mayo much richer with a custard-like texture that makes it easier to blend with sauces.
  2. Rice Vinegar: Japanese mayo uses rice vinegar instead of white vinegar or lemon juice for a more gentle tartness.

My go-to is definitely Kewpie Japanese Mayo. I always have some on hand and a back up in the pantry. Itโ€™s an easy condiment to use for a creamy, slightly sweet flavor that goes well with seafood or vegetables.
