You all know I love mushrooms, but this Creamy Stuffed Portobello Mushroom might be my new fav mushroom recipe.
I was inspired by The Keg’s stuffed mushroom recipe, one of my must orders whenever I visit.
The filling is super creamy and packed with umami flavor from the seafood, while the mushroom is air-fry till fragrant and soft, making it the perfect dinner combination.

All you need to make Creamy Stuffed Portobello Mushroom is cream cheese, Japanese mayo, shredded cheese, initiation crab meat, lemon zest, green onion, and chopped shrimp.
You can also use fresh meat and skip the chopped shrimp. The best part about stuffed portobello mushrooms if you can customize the filling based on what you have in the fridge.
Other ingredients you can add are sweet corn, bacon, tuna, and peas.

Today, I am using an air fryer to make my creamy stuffed portobello mushroom.

Ingredients
- 2 Portobello Mushroom
- 1 cup imitation crab meat, shredded
- 3 tablespoon cream cheese
- 2 tablespoon Japanese mayo
- ¼ cup shredded cheese
- 2 green onions, chopped
- ½ tablespoon lemon zest
- ½ cup chopped prawns or shrimp
- Black pepper
- Mix imitation crab meat, creamy cheese, Japanese mayo, shredded cheese, green onion, lemon zest, chopped prawns, and a pinch of black pepper in a large bowl.
- Take off the stem of the mushroom, and using a spoon, gently scoop out the inside of the mushroom until it is clean.
- Stuff the mushroom with the creamy filling, around 5-6 tablespoons per mushroom, depending on how big your mushroom is.
- Air fry at 380F for 12 minutes or until crispy on the outside and creamy on the inside.
- Optional, garnish with seaweed powder and sesame seeds, and enjoy!
