Crispy Ginger Salmon Bites

I’ve been seeing salmon bites all over TikTok, so I had to recreate my own Ginger Glazed Salmon Bites that are super easy to make at home. Since the salmon is cut into bite-sized pieces, each piece is crispy on the outside and tender and flakey on the inside.

Ginger Salmon Bite Ingredients 

Honey Glaze

  • 1.5 tablespoon honey
  • 2.5 tablespoon Soy Sauce
  • 0.5 tablespoon freshly grated ginger
  • ¼ cup water

Corn Starch Slurry

Ginger Mayo Marinade

You only need a few simple ingredients to make Ginger Glazed Salmon Bites. Salmon, Fresh ginger, honey, soy sauce, oyster sauce, salt and pepper, and Japanese Mayo. If you are allergic to shellfish, you can also substitute oyster sauce with vegetarian oyster sauce.

The secret trick that keeps the salmon moist even after the air frying is using MAYO. The fat content in mayo flavors the salmon, but also provides a barrier. So, the salmon stays crispy on the outside and tender on the inside.

Honey Ginger Glaze

Optional, but highly recommended, make a honey glaze sauce to drizzle over the salmon. If you like a sticky, thick sauce that goes super well with rice, this is it. This glaze is super easy to make. All you need is soy sauce, ginger, honey, and water. Thicken on medium-high heat for 2-3 minutes, and thicken with a corn starch slurry.

How To Make Ginger Salmon Bites

  1. Marinate the salmon with honey, freshly grated ginger, soy sauce, oyster sauce, Japanese mayo, salt, and pepper for 20 minutes. 
  2. Air fry at 380F for 12 minutes, flipping halfway through. 
  3. Optional: Make a honey glaze sauce to drizzle over the salmon. Add soy sauce, honey, ginger, and water to a pot. Bring it to a simmer on medium-high heat for 2-3 minutes or until bubbly. Add corn starch and water slurry to thicken, and simmer for another 1 minute.
  4. Drizzle the sauce over the salmon, and garnish with sesame seeds.

    This looks sooo good, I’m just wondering though if regular mayo would work as well? I know it’s not as good as Japanese mayo but that’s all I have to hand right now!

    This was so great! i didnt have oyster sauce so i use sugar and hosin did the trick
    The glaze elevates it a whole other level and its super easy to make – thankyou!!
    The salmon was perfect amount of crispy outside soft inside, not dry at all.
    And its great to pair with the Korean Marinated Eggs recipe on the website

    I absolutely love these salmon bites! I often use the sriracha kewpie. Would I be able to freeze the salmon marinating or leave the salmon in the marinade in the fridge overnight or is it a marinade that’s really best done just 20 minutes before? For when I have extra salmon & excess marinade! Thank you 🧡 🇦🇺

    1. Hi Amy, all of those marinating methods work! Because they are bites, they will be a little more salty if you marinate them overnight. Alternatively, you can also let them sit as a filet in the marinade, and then cut into bites and let sit in the marinade for a bit before cooking so they’re still seasoned, but not so concentrated.
