Making 14 Courses for A 15 People Dinner Party

I’ve been dreaming about poke since my trip to Honolulu! Poke is a Hawaiian dish of chopped raw fish mixed in delicious seasoning. Since Dom’s grandma is visiting from Taiwan, I wanted to share this quick appetizer with her for our 14 course dinner. While nothing will compare to that fresh, melt-in-your-mouth texture straight from Hawaii, this easy homemade version will totally satisfy your poke cravings. Today, I made 2 different variations, the classic creamy salmon, and a spicy gochujang version.

Creamy Salmon Poke Ingredients

  • 1 pound Sashimi-grade Salmon
  • 1/3 cup masago
  • 4 tbsp Japanese Mayo
  • 1.5 tbsp Gochujang Optional
  • 1-2 stalk green onion chopped
  • 1 tbsp white sesame seeds
  • 1 tbsp black sesame seeds
  • 1/2 Cucumber
  • Crispy Seaweed to serve

Sashimi Grade Salmon

I love using salmon for poke because of its naturally fatty, creamy flavor. It’s an excellent source of omega-3 fatty acids, proteins, vitamin D, and vitamin B.

For poke, always make sure you use the freshest sashimi-grade salmon. Sashimi-grade salmon has been temperature-treated so it can be safely eaten raw. If your salmon looks a little discolored and not so fresh, it is probably better for cooking instead. Never let your fish sit out too long at room temperature! When slicing, cut them into little bite sized cubes so they will mix right in with the other ingredients.

Creamy Poke Sauce

The other key component of this easy creamy poke is the sauce. This particular flavor combines the Hawaiian tradition of poke with the Japanese love for Kewpie Mayo for that extra creamy flavor. I’m also adding sesame seeds and masago, because I love that extra crunchy pop.

To make the spicy creamy salmon poke, all you have to do is add in gochujang as well! It adds a bright spiciness to the salmon that just makes you want one more bite.

How To Make Creamy Salmon Poke

  1. Cut the salmon into bite size pieces.
  2. Add in masago, Japanese mayo, chopped green onion. and sesame seeds. If you want to make the spicy version, add gochujang here.
  3. Mix well, then fold in some chopped cucumbers.
  4. Serve on top of rice or with crispy seaweed.

How To Serve Your Creamy Poke

My favorite way to serve this creamy poke as an appetizer is with a stack of crispy, crunchy seaweed. Scoop a little poke on to the seaweed, and it makes such a refreshing bite. It’s just as good with chips or crackers!

Or, you can make this a full meal. Grab a bowl of rice, and pour your poke on top, and add toppings like avocado, corn, and furikakke for an easy poke bowl at home. You can also add salad mix to make a refreshing salmon poke salad.
