Classic Chicken Salad Sandwich
This Classic Chicken Salad Sandwich is a recipe you can make for everything – from a quick breakfast, lunch, or dinner to an elegant spread for a home cafe event. It’s nice and creamy from the Japanese mayo, but has a bit of a kick from black pepper, yellow mustard, and mustard seeds (or whole grain mustard). For crunch, I added celery and green onions.
I love that this simple Creamy Chicken Salad recipe can be straightforward, or made into something entirely your own. For my home cafe, I sandwiched these between two halves of a flaky, buttery mini croissant for the perfect finger food. I wanted this chicken sandwich to stand out even more, so I added red onions for a more robust flavor.

Hosting A Home Cafe for 22 Guests
This month, I hosted a home cafe experience with 22 of my closest family and friends to say “thank you” to some of the special people in my life. We made a huge spread of small bites and treats, including this Classic Chicken Salad Sandwich with mini croissants, which was such a hit! Making and enjoying these amazing recipes with my friends and family just puts a smile on my face. This weekend also gave me a chance to spend the whole day prepping and baking with my mom. I’ll be the first to admit that I’m not the best baker. Needless to say, my Mom was a huge help, and we had so many laughs along the way while spending quality time in the kitchen together.
Chicken Salad Ingredients
- 1 Rotisserie Chicken shredded
- 2-3 stalks celery chopped
- ½ medium sized red onion diced
- 2-3 tablespoons mayo of choice
- 1.5 tablespoons Japanese mayo
- 1 tablespoon yellow mustard
- 1 tablespoon mustard seed
- 1 tablespoon black pepper
- mini croissants

Shredded Costco Rotisserie Chicken
We all know the rotisserie chicken is a must grab on a Costco run. How could you pass it up for $5? I almost forgot how busy Costco gets on the weekends, because we almost missed out! We had to split up and stand in line to snag one at a time. Thankfully, we ended up with 3 – definitely enough for our home cafe.
My go-to after-Costco routine is a shredded rotisserie chicken meal, whether it’s this Chicken Salad Sandwich, or a quick Shredded Chicken Sesame Cold Noodles. I like using disposable gloves to shred the chicken by hand. You can pull so much meat off of one rotisserie chicken, it’s easy to make multiple meals from this one great buy.

Build Your Own Chicken Salad Varieties
Our Chicken Salad today includes celery, red onion, and green onion, and it’s a versatile base to experiment with. You can definitely add your own favorite salad ingredients to make this salad your own. For a little added sweetness, add fruits like diced red apples. Or, go with the classic Waldorf style and fold in some halved red grapes. For a healthier option, you can even substitute avocado for the mayonnaise – the texture stays just as creamy! The options are absolutely endless; jalapeños, pickles, toasted nuts, and of course, bacon!

What Other Bread To Use For Chicken Salad Sandwich?
This Chicken Salad Sandwich is tasty no matter what type of bread you use. I first taste tested this sandwich with my mom with toasted Milk Bread slices, and it was so good! This salad would be great as an open-faced sandwich on top of a slice of Cheesy No Knead Bread, or on a toasted Japanese bagel. If bread is not your thing, this chicken salad is also a great filling for a quick, low-carb snack of lettuce wraps. So many choices!
For the event, I decided to go with a buttery, flaky, delicious croissant that really complimented the crunch of my chicken salad. I also overstuffed them, so they were a bit messy to enjoy – but that’s half the fun of finger foods!

How To Make Easy Chicken Salad Sandwiches
- Shred all meat off of the rotisserie chicken –
- Chop green onions, red onion, and celery.
- Add shredded chicken, green onions, and celery into a large mixing bowl
- Season with regular mayonnaise, Japanese mayonnaise, regular mustard, mustard seeds, and black pepper.
- Mix all the ingredients together.
- Slice mini croissants in half, and spread the chicken salad in between the two halves. Serve hot or cold.
